Started with a beautiful Black Onyx Tri-tip from Kelly's Meats

Trimmed, then seasoned with my Fiesta and Siesta

Into the smoker indirect until just on medium rare, then finished over charcoal

Flour tortilla, rice, guacamole, salsa and beans

Catering today onsite (first time on a construction site since I left the industry 😀)

Wagyu Brisket, Pulled Pork, Pulled Chicken thighs, pasta and potato salad

Now, I grabbed very few pics, and these ain't the prettiest, but I let the food do the talking

Feedback was phenomenal

With a fella, who had been in the construction industry for 27 years, saying that was the BEST catering he has ever had on a job site

One with American Cheese, the other with a 3 or 4.....I dunno, cheese sauce

Big thanks to Kellys Meats for supplying all the amazing Sher Briskets for our little pop-up yesterday

Cold, wet and windy

But we still managed to serve 300 Brisket rolls in 3 hours, 12 briskets sliced and slapped between a brioche roll

Here's 30 seconds from first to last roll

Good morning!!!

Well, what can I say, yesterday at Loaded Barrel Distillery was an absolute blast 😄

Perfect weather (sure it's cold, but the pit was warm) for Barbecue and Drinks

We teamed up for 3 booked sessions across the day, with brilliant feedback from all the punters

It was a lot of fun 😊 Brisket, Pulled Pork, Chicken Wings and sides

Couple pics of the day, including the highlight of the day.............(twice this year) You'd think I'd learn 😂 time for a proper work car

I've been mixing up some pretty tasty sausages at Kellys Meats like this one, the Banh Mi

Coarse pork belly, spring onion, crispy shallots, hoisin, coriander, carrot, chilli and crackle

Loads of flavour!!

I think they are the best butcher in Melbourne, and if you think it too, get voting in Triple M's Best Of!

1pm session still has some spots, as does 3.30pm, but 6pm is a full house
