LEMON CAPER SAUCE WITH SPAGHETTI 🍋
Ingredients:
- 2 x juiced lemons
- Olive oil
- 40g of Capers
- 80g of Parmesan (or as much as you like)
- Pasta water
Method:
- Cover the pan in olive oil and heat on medium heat for a minute then add capers
- Start cooking your spaghetti in a boiling pot and cook for 5-6 mins if packet pasta or 2 mins if fresh
- Once capers are slightly crispy, add the lemon juice
- Simmer for 30-40 seconds and then add some pasta water
- Simmer for a further minute and then add your parmesan
- Simmer for a further 30-40 seconds and then add your cooked pasta to the pan
- Finish with more parmesan, salt and pepper
