It's been a few months since we launched our new menu, and you've voted with your tastebuds on what's in and what's out — so here's what's changing this week!

✅ What's IN
The Fiamma and Spiced Agnello have officially earned their permanent spot on the menu — the Spiced Agnello in particular has been a standout by a country mile!

❌ What's OUT
The Maiale Gorgonzola and Picante are bowing out. If they were your favourites, don't worry — there's plenty of other delicious pizzas to fall in love with!

Sorry everyone, especially our Thursday Regulars (and there's a LOT of you😍😍😍)No trade from us today folks! 🙈

Chef Jarrad is currently wearing approximately 4 hats 🍩🔨🛠️👨‍🍳 — chef hat, welder's helmet, chippy hat, Maria's Therapist🤣... the man is a walking, talking tradie-foodie hybrid right now and we are NOT complaining.

Why? Because we've got brand new Roma delights dropping at the Pioneer Valley Show this weekend and everything needs to be perfect — the dough, the flavours, the display. We'd trade tonight but 3am bedtimes aren't it 😂

5pm is just when you see us. The work started days ago. 👀

Tomorrow we feed C&C and everyone they love at the but the dough? That was started Sunday, rolled today and will feed their loved ones tomorrow❤️.

A month ago schedules were confirmed, last week orders were made, today deliveries arrived, tomorrow salumis will be sliced, the desserts whipped, the details obsessed over.

You're not paying for our time on the night. You're paying for the craft that comes before it.

That's what we do — show up with days of prep, so your guests only ever feel the magic.

Dough is a science🔬

On any given day the gluten and protein structures will decide what to do - all influenced by temperature, humidity and the dough gods (Yes they're real, we won't be told otherwise🤣).

It's a real art, and why any Chef or Baker worth their salt is obsessed with quality ingredients and quality tools to ensure they're delivering you the very best, each time.

The temperature is dropping in Mackay so instead of a mad rush to get dough in and out of fridges, or quick proofing, it's low and slow with the help of a fire torch or two for the next few months🥰.
