Toasted Wattleseed brings something unmistakably local to this glass!

Earthy, and gently smoky, this native ingredient pairs beautifully with bourbon, drawing out its warmth while adding a unique savoury fragrance.

For this new winter cocktail at Anvers, the bourbon is fat-washed, softening its sharper edges and giving the drink a richer, more rounded texture, while orange bitters add depth, spice and balance. The flavour is finished with a Toasted Wattleseed tincture.

Winter has its own kind of beauty from our windows in the Adelaide Hills.

At Anvers, the fire is on, the dining room is warm, and beyond the glass, the weather rolls gently over the vineyard.

Gewürztraminer (guh-VURTS-trah-mee-ner) isn’t a simple grape.

For many years it sat in the background of Australian wine, often blended into softer, aromatic white styles. But in cooler regions, it has found a more expressive future, as a wine with perfume, texture and real personality.

Our cooler climate gives Gewürztraminer the space it needs to hold its shape. The elevation, crisp nights and slower ripening help keep freshness in the glass.
