Trimmed, seasoned and spiced, ready for tomorrow's cook. Salt, pepper, garlic powder, and paprika is my secret spice recipe, and cooking it for 12 hours in smoke is my other secret ingredient. Tomorrow this brisket will look significantly different, and will be significantly eaten. Eaten potentially by you.

Available from Mount Nelson, 400 metres past the sports ground toward the signal station from 5 to 8pm, $40 for a serve. Comes with mac n cheese and coleslaw. Beef ribs are available too.
