The number one hack in the kitchen is something we all know, but often forget:

Presence.

Being present while you cook changes everything. It helps you connect with the ingredients, develop intuition, and feel more confident in what you’re creating. It turns cooking from another task on the to-do list into something grounding and enjoyable.

Nowadays we’re constantly surrounded by stimulation. We’re listening to podcasts, scrolling, planning the next thing, thinking about tomorrow while doing today’s tasks. We’re always chasing the next dopamine hit, and we rarely allow ourselves to simply BE.

For me, the kitchen is where that changes.

I’m not particularly good at sitting down to meditate, but cooking is my meditation. When I’m cooking, I naturally focus on what I’m doing. Some people find that feeling in gardening, running, training, or driving. I find it in the kitchen.

When you slow down, you pay attention to the texture of the flour, the smell of the herbs, the sound of vegetables sizzling in a pan, and the taste of the food as it develops, you reconnect with your senses. You understand what the dish needs. Maybe more salt, maybe more spice, maybe more time. You stop following rules blindly and start cooking intuitively.

And somehow, while nourishing the food, you’re also nourishing yourself. Your nervous system relaxes, your mind quiets down, and you come back to the present moment.

This is what I mean when I say my food is made with love. 🧡

Team traditional tiramisu or team pistachio tiramisu?

I’m ready to take orders, I’ve got a small batch ready to be picked up this week.
Those serves 4, I follow a traditional Italian recipe, made with fresh eggs, mascarpone, savoiardi biscuits and coffee from my moka. Don’t expect that ultra sweet taste, this is a creamy and well balanced taste that will make you addicted to it, trust me 😏

Winter is slowly approaching here in Queensland, and as an ex-European, I truly love the change of seasons. It reminds me how important it is to listen to our body, and allow ourselves a little reset.

When the weather starts to cool down, the first thing I do is reconnect with what nature is offering in that moment. Instead of reaching for mangoes or watermelon from the supermarket, I naturally focus more on citrus fruits,full of vitamin C and exactly what the season is giving us.

I also go back to the little habits I grew up with. Socks on first thing in the morning and again in the afternoon,and never drink cold beverages in winter. My nonna always used to say that my teeth would fell off if I drink cold water (at any season) 😆

And that’s what I love to do in winter, bake when outside is around rainy and cold day.
This cake is made with almond meal, fresh oranges, and a handful of dark chocolate chips, because honestly, chocolate belongs in every season, hehe.

Enjoy!

ORANGE AND CHOC CAKE:

300g almond meal
300g of flour (or GF flour)
4 tsp baking powder
1/2 tsp bicarbonate
200g coconut oil
120ml orange juice
4tbsp orange zest
300g coconut sugar, or honey/maple
330ml milk (any kind)
1tsp vanilla

Choc chips as many as you like!

Process is easy, you mix first the wet ingredients in a bowl, then the dry ingredients another, mix all together and place in a 12” cake tray.
Bake for around 45min or do the stick test, top it with a squeeze or orange juice, and orange slices. I like to add pistachios and rose petals in mine 🌹

I’ve been feeling called toward a shift lately,something that aligns more with my lifestyle and a deeper desire to share and give back to the community, trusting the path it opens.

So I’m starting to share the recipes I’ve developed over the years of my baking journey, beginning with a simple vanilla cake 🌼

It’s a versatile base you can twist however you like~top it with your favourite fruit, turn it into a layered cake, or make it into muffins. I’m loving an apple and cinnamon version at the moment as the cold season is approaching.
