Tahitian style - coconut milk marinade, wrapped in banana leaves and slow cooked on a covered barbecue (my version of an ahima’a.) Why Tahitian? My father loved his music and as previously posted, he had a huge collection of records with music from just about every country and almost every genre. I came across a long forgotten song last week - ‘Tamoure’ by Bill Justis and I would have been around 8 years of age when dad bought this record which my sisters and I used to dance to - as kids do. I have often described my father as a music omnivore and many times questioned how do you go from Gypsy, Italian, Greek, Flamenco, Latin American, Middle Eastern, Rock & Roll, Jazz, Blues, Classical, Country, R & B and so on and in addition taking on the Polynesian family of music? The only answer I can come up with is music is no different to food…..one style, one taste will never be enough.
