Tonight’s meal is one for the gods.
Thank you to Austral Meat and the team for suggesting duck breast for a mid week meal. So glad you did. Duck breast is on special, pop down and try my recipe today. Cooked over Charcoal Kings premium hardwood lump charcoal. Light dusting with apple rub seasoning, apple wood for smoke, reverse seared and finished off on direct heat. Pulled at 54 degrees.
My lemon Greek potatoes, chargrilled broccolini dusted with Angus and oink garlic butter.
My homemade apple butterscotch sauce.

Happy duck day all our beautiful duck breast supplied my the best Austral Meat and are currently on sale this week. Pop in and grab yourself some.
Duck breast salt brine over night with kosher salt.
Pulled out of fridge 45 mins or so before rub.
Apple rub and allow to absorb for 15 mins
Light up the best Charcoal Kings premium hardwood lump charcoal add some apple chips for smoke
Reverse sear for 25mins skin up then over direct skin down for 2mins turning 90degrees every 30seconds
Pull off at 54 degrees allow to rest for 15 mins slice and add my home made sauce dinner done.

Thank you to Austral Meat for pointing me in the right direction with these amazing Jack's Creek Wagu scotch steaks.
Pair that with Charcoal Kings arabica premium lump charcoal and add a light dusting of Croix Valley Memphis rub, add some mash and roasted pumpkin dinner done.
