Nigella’s Date and Nut Cake with Black Coffee

Ingredients:
200g (1 1/4 cups) pitted dates, chopped
250ml (1 cup) strong black coffee, hot
100g (1/2 cup) brown sugar
2 large eggs
100ml (1/3 cup + 1 tbsp) neutral oil or melted butter
1 tsp vanilla extract
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp baking soda
1 tsp baking powder
1/4 tsp salt
180g (1 1/2 cups) all-purpose flour
100g (1 cup) chopped walnuts

Tools Needed
Mixing bowls
Whisk
Spatula
9-inch round cake pan
Parchment paper
Cooling rack

Suggested Substitutions and Additions

How to Make Nigella’s Date and Nut Cake with Black Coffee
▪️Preheat Oven:
Set your oven to 180°C (350°F) and line a 9-inch round cake pan with parchment paper.
▪️Soak Dates:
Place the chopped dates in a bowl and pour the hot black coffee over them.
Let them soak for 10-15 minutes until softened.

Mix Wet Ingredients:
▪️In a large bowl, whisk together the brown sugar, eggs, oil (or melted butter), and vanilla extract until well combined.

Butter Buns

Ingredients:

* 10 g instant yeast
* 2 tablespoons sugar (25 g)
* 1 cup warm milk (200 ml)
* 1/2 cup warm water (100 ml)
* 1/4 cup vegetable oil (100 ml)
* 1 egg white (reserve the yolk for brushing)
* 4.5 to 5 cups all-purpose flour *(540–600 g, add gradually)
* 1 teaspoon salt (5–6 g)

To spread in between:

* 50 grams butter
Instructions:
Place all the dough ingredients in a bowl and knead until smooth. Transfer to a covered container and let it rise for 30–40 minutes.

Roll the dough out into a rectangle, spread the room-temperature butter over it. Roll it up tightly and slice into 2 cm thick rounds.
Place them diagonally into a loaf pan, cover, and let rise again until it reaches the top.

Brush with egg yolk and bake in a preheated 180°C (350°F) oven for 40–50 minutes
Cover the top with parchment paper if needed to prevent burning.

Beef curry recipe

INGREDIENTS :
1kg stewing beef
1 onion, finely chopped
2 tsp garlic paste
1 tsp ginger paste
1 level tsp borrie
1 tsp methi seeds
1 heaped tsp danha jeera powder
1 cup plain yoghurt
1 tblsp tomato paste
1 green chilli
1 dessertsp mild curry powder(Durban Masala)
Salt & pepper, to taste
Water (as needed)
Potatoes
Salt to taste
1 tsp baking powder

method:

Marinade beef with durban masala, , borrie, danha jeera, methi seeds, salt, baking powder, and plain yoghurt for 2 hours
Heat oil. Add the onions, green chilli, garlic and ginger, stir.. cook until onions are soft...

Now add the meat to the onions stir over a medium-high heat for a few minutes. Add 1cup of water & cover the pot with a lid, stirring occasionally, cook on medium heat for 30 minutes... adding more water if necessary. Then tomato paste and cook until cooked through. Once cooked through add in your potatoes. Since its beef the meat wont break down easily. Lastly add danya leaves together with the stems that was cleaned cut finely.

500g softened butter/ rama
3 cups brown sugar
Beat above
Add in 3 jumbo eggs 🥚
2 teaspoon baking powder
3 tablespoon vanilla extract
Beat
Add in 5 cups flour (donot add more)
4 cups choc chips (or measure with your heart ❤️😉)

Make a soft dough
Shape into small balls
Place on a greased baking tray set apart as they will spread alittle
Bake @180⁰ for 13 to 15 minutes not longer.
They will harden as they settle

Like biting into a cloud ☁️

A crisp shell, a pillowy center, and clouds of whipped cream.
Topped with strawberries and a drizzle of zesty lemon curd or chocolate – this pavlova is pure poetry on a plate. 🤩

Pavlova



4 egg whites (set yolks aside)
Beat with ¼ teaspoon cream of tartar until stiff

Gradually add in 1 cup castor sugar and mix until thick . Add 1 tablespoon cornflour and 1 teaspoon vinegar and mix.

Place mixture into a piping bag and pipe. Bake @ 120 ° thermofan oven for 1 - 1 ½ hrs.

Lemon curd
Mix egg yolks with ½ cup sugar and ¼ cup lemon juice.
Bring to boil and stir continuously. Add in 2 tablespoon butter and mix in.

Top with fresh cream and strawberries and drizzle over lemon curd or melted chocolate.

Oven baked Ribs



In a bowl mix together:
1 teaspoon pepper
1 teaspoon origanum
1 teaspoon mustard powder
½ teaspoon garlic powder
1 teaspoon salt
2 teaspoon paprika
½ teaspoon onion powder
1 teaspoon six gun grill seasoning
2 teaspoon Chilli powder
¼ cup brown sugar

Sprinkle spice mix over a packet of Ribs.
Add a drizzle of oil and mix.
Cover with foil.
Bake 180deg for 2 hrs.

Basting sauce
½ cup prego sauce
¼ cup tomato sauce
2 tablespoon honey
2 tablespoon worcestershire sauce

Brush sauce over Ribs.
Then place under grill to get a perfect char

Turkish Flat Bread (Bazlama)

Ingredients
1¼ cups warm water 105-110˚F
2 ¼ teaspoons active dried yeast 1 packet
1 tablespoon sugar
¾ cup Greek-style yogurt
2 tablespoon extra virgin olive oil
2 teaspoons kosher salt
3 ¾ cups all-purpose flour more as needed (see Notes below) and for the counter
¼ cup finely chopped flat leaf parsley

Instructions
Combine the yeast, sugar, and water into a medium-large bowl and stir well. Allow to sit in a warm place for 5-10 minutes to activate the yeast. The mixture will be foamy and bubbly when activated.
Whisk in the Greek yogurt olive oil and salt.
Add flour and parsley and stir with a wooden spoon or sturdy spatula and until the dough comes together. Turn dough out onto a well-floured counter and turn to coat. (I use around a ½ cup extra flour (sometimes more) for the kneading process - I just keep sprinkling the work surface as I knead the dough.)
Divide dough into 10 equal pieces, sprinkle lightly with flour, then cover with a clean kitchen towel. Allow to rest for 15 minutes.
Preheat a medium saute pan to a medium-low heat. While the pan is heating, roll one of the dough portions into an approximately 7-inch circle.
Brush the top surface lightly with extra virgin olive oil. When the pan is hot, pick up the first circle with your hand and place in the pan, oiled side down. Lightly brush the top surface with oil. Allow to the flatbread to cook for about 1 to 1 ½ minutes, until the top surface is covered with bubbles and the underside is golden around the edges and in spots.
Flip to opposite side and cook for another 60-90 seconds until a few small golden spots appear. Don't overcook on the second side. Repeat rolling, oiling and cooking with remaining portions of dough.
Sprinkle flatbreads with a bit more chopped parsley when finished, if desired. Stack flatbreads in a clean kitchen towel after cooking to steam a bit and retain softness.
When cool, store in a ziplock bag. Reheat in a pan without oil for a minute or two on each side OR wrap flatbreads in paper toweling and heat in the microwave on low power until warm.

*Note - the amount of flour you need can vary depending on the type of flour you use. This recipe was developed using all-purpose King Arthur flour. If you find that you dough is too loose after mixing, just add more flour, 1 tablespoon at a time to reach a consistency where the dough forms a ball in the bowl.
The same thing is true when you knead the dough on the counter. Continue to sprinkle the counter with flour as you knead if the dough is still sticky and until it forms a nice smooth ball.

Mango Salsa 🥭🌶️

📋 Ingredients:
🥭 2 large mangos (diced).
🍅 2 Roma tomatoes (seeded and diced).
🧅 1 red onion (thinly sliced).
🌶️ 1 jalapeno (diced thinly).
🌿 ½ cup fresh cilantro (roughly chopped).
🍈 Juice of 2 limes.
🧂 ½ teaspoon salt.

📝 Instructions:
1️⃣ Cut each mango in half lengthwise. Remove the pit and make slices lengthwise and horizontal across the half without cutting through the peel. Turn the flesh inside out and scoop the cubes off carefully with a spoon or a paring knife. 🥄
2️⃣ In a large bowl, combine the diced mango, diced tomato, sliced red onion, diced jalapeño, and chopped cilantro. 🥗
3️⃣ Add in the lime juice and salt and stir to combine. 🍋

📌Notes:

Directions:
