Kienyeji kuku
Ingredients:
• 1 whole kienyeji chicken (cut into pieces)
• 2-4 tablespoons cooking oil depending on how you like it
• 1 large onion, finely chopped
• 3 large tomatoes, chopped
• 1 teaspoon tomato paste (optional, for color)
• 1-2 green chilies (optional, for heat)
• Fresh coriander(Dhania) chopped
• Salt to taste
• Water or chicken broth (for boiling)
Secret ingredient for Luhya tribe (Omusherekha)
Note: Most Kenyan homes prefer less spices but there is no harm when you go in with a pinch of garlic, turmeric, paprika, cumin, gharam masala, coriander (All spices pleasant to you).

Instructions:
Step 1: Boil the Chicken
1. Lightly roast the chicken before boiling
2. Place chicken pieces in a sufuria (heavy pot).
3. Add salt and enough water to cover the chicken.
4. Boil until the chicken is tender. This can take 45 minutes to 1.5 hours, depending on the toughness of the chicken. (You can use a pressure cooker to cut down the time.)
5. Set aside the broth – don’t pour it out!
Step 2: Make the Stew Base
1. In another sufuria, heat oil.
2. Add onions and sauté until golden brown.
3. Add garlic then cook for a minute.
4. Add tomatoes, tomato paste, and spices (turmeric, paprika, cumin/masala). Let it cook down until thick and saucy.
5. Optional: Add chopped green chili for some kick.
Step 3: Add Chicken
1. Add the boiled chicken pieces to the stew.
2. Stir well to coat with the tomato-onion mixture.
3. Add about 1 cup of the reserved chicken broth.
4. Simmer on low heat for 10–15 minutes to let the flavors combine.
Step 4: Finish
1. Check seasoning – add salt if needed.
2. Sprinkle fresh coriander on top before serving.

Serving Suggestions:
• Serve with ugali (Brown or White), rice, chapati, mukimo or mashed matoke.
• Add some sukuma wiki or cabbage on the side for a full Kenyan meal!
