When I was a kid, BBQ meant one thing: Kingsford charcoal. My old man never smoked a thing in his life, but the smell of that charcoal still brings me back to meat on the grill.
The Carolinas use burn barrels and hot coals. Texas goes all-in on post oak. I use a lot of local Michigan fruitwoods—but to really smell like Michigan summer, I throw at least 20 lbs of on every smoke.
Pro tip: grab the big bags at Sam’s Club for the best deal.
