Big love and a hearty baille (that’s “hug” in Cajun!) to Ms. Cathy Lilio, the driving force behind the Anniston Police Foundation. Since founding the Foundation in 2019, she has served as its President of the Board, dedicating countless hours to raising vital funds for the Anniston Police Department’s needs—from updated gear for the Special Response Team to supporting the K‑9 unit and scholarships for local youth .
Cathy leads a passionate, all-volunteer board (none of whom take a dime for their time), ensuring every dollar raised goes right back into the community to help our officers—and those they serve—live safer and stronger.
We’re honored Roll Cajun Boudin was tapped to cater this year’s Annual Charity Golf Tournament, raising proceeds that truly make a difference. A big thank you to Cathy for trusting us to handle the food—and a heartfelt salute to all first responders out there: police, fire, EMS—you’re the ones who step up when others step back. We see you. We salute you.
Anniston has rolled out the welcome mat to us in the most flavorful way imaginable—just like your favorite boudin—and it holds an extra special place in our hearts. We couldn’t be prouder to support a town that supports its heroes so fiercely. We’ll be back soon, and bringing that same Cajun spice and love as always, sha!
