Since I just got back from key west I’m doing a Pina colada inspired meal!

Chicken marinated in pineapple and other fresh citrus then grilled. Served over coconut jasmine rice and grilled pineapple. choice of chicken tenderloin or boneless thighs. Gluten and dairy free.

Next week I’m doing an Italian classic. Spaghetti and meatballs. My families recipes for sauce and meatballs from Sicily! Comes with garlic bread. For a vegetarian option I can do spinach ricotta balls instead of meat. I can also make a gluten free version!

Salad is an Italian chopped salad with romaine, fresh basil, tomatoes, cucumbers, olives, salami, fontinella cheese, and garbanzo beans in a white balsamic vinaigrette. Gluten free. For vegetarian option I can omit salami and bump up the other ingredients. Gluten free!

Next Monday is cinco de mayo and I’ve got a fun menu I’m excited about!
Al pastor taco tray! Slow roasted marinated pork and pineapple with pickled red onions, queso fresco served with a pineapple slaw to have on the side or put right on the tacos. (Gluten free)

Salad is a Mexican pasta salad with black beans, corn, tomatoes, green onions, cheese and an avocado cilantro dressing. (Vegetarian)
