Meet the team behind the scenes here at Once Upon A Time…

Leticia, our Sous Chef, has been with us since 2022.

“My passion for cooking started in childhood, inspired by the women in my family who showed me the magic of food.

I refined my skills at culinary school in Brazil before moving to England, where my love for European cuisine grew. This journey took me to Italy and Portugal, where I learned the beauty of simplicity and the importance of fresh, local ingredients.

Back in England, I settled in London and worked with Chef Nuno Mendes, an experience that shaped my culinary journey. At Once Upon a Time, I now explore the world through food, crafting dishes that tell a story and create unforgettable experiences

To me, food is art, emotion, and connection. It tells stories, creates memories, and brings people together. It’s how I express myself and share my culture. Every dish is a new chance to be creative. When I engage with food, I engage with life, it feeds my body and soul, blending tradition, creativity, and the moments that bring us closer.“
