Today's platter sale was amazing! I cant thank you all enough for the support. I cant lie, at one point the parking area ( not big at all) was full of people just hanging out, and talking. That was a special moment for me. I'm grateful!

Here's the thing: after days of cooking, minimal sleep, 15k steps daily leading up to events...by the time event day comes around I'm wiped out (especially mentally). I have bloopers for days 😂😂

This is part 2 to my all night smoking session. If you haven't watched part one, go check it out. I will add the post in the comments.

The total smoking time including resting the meat was around 18hrs. I think I didn't havr to rest it that long. The meat was tender, flavorful and had a great smoke ring, but the brisket could have been pulling a little sooner.

Making sure your food is ready and hot, without it becoming mushy can get tricky. Especially because most parties never start on time. You have to be prepared to put your sterno's out, this will ensure your food doesn't over cook.
