What a great weekend! We provided the meal for the Grace Dinner Theatre -- yummy lasagna and home-made dinner rolls with a tossed salad. Home-made ranch and French dressings -- just soooo gooood!!

We had the opportunity to cook for a birthday party of 15 last weekend -- as usual, we were too busy making the food amazing to get pictures of everything. In addition to what's pictured, we presented a porcini mushroom and peppercorn encrusted beef tenderloin, scallops with lemon herb sauce, sweet potato gnocchi with brown butter and sage sauce, and angel hair pasta with herbed broccoli. Thanks to Dr. Walter and his family for inviting us into their home. Happiest of birthdays to you!

We were honored to provide food for two events at Rooted In Red recently. So much savory deliciousness and finished with a sweet treat of mint chocolate mousse. Our Italiano night at Blenker Construction was a success! We started with an Antipasto Board -- Sweet Peppers, Marinated Feta-stuffed olives, Balsamic onions, assorted tomatoes, salami, and cheeses. We decided Italian Wedding Soup was the best fit with our entree...fresh-baked focaccia bread to accompany the soup--quickly becoming a favorite! The main course was Butternut Squash Ravioli with a brown butter and sage sauce, paired with roasted peppers. A sweet finish of fresh-made zepole rounded out this Italian feast! A little late posting this -- did the event and then went on vacation for a couple of weeks :) Appetizers at the Design Class/Networking event at Avenue Title in Wisconsin Rapids on May 28, 2025. Blenker Construction partners with this event.

Our last event at Blenker Construction until the Fall...we decided to do a Mexican theme since it's so close to Cinco de Mayo. Seafood enchiladas with Spanish Rice, Chicken Taquitos with Pico de Gallo and Avocado Cream Sauce, and Margarita Cheesecake Mousse.

Design class at Blenker Construction tonight! Pina colada fruit dip, ham and cheese pinwheels, and crab-stuffed mushrooms. Lovely balance of sweet and savory goodness.
