Our Italiano night at Blenker Construction was a success! We started with an Antipasto Board -- Sweet Peppers, Marinated Feta-stuffed olives, Balsamic onions, assorted tomatoes, salami, and cheeses. We decided Italian Wedding Soup was the best fit with our entree...fresh-baked focaccia bread to accompany the soup--quickly becoming a favorite! The main course was Butternut Squash Ravioli with a brown butter and sage sauce, paired with roasted peppers. A sweet finish of fresh-made zepole rounded out this Italian feast! Our last event at Blenker Construction until the Fall...we decided to do a Mexican theme since it's so close to Cinco de Mayo. Seafood enchiladas with Spanish Rice, Chicken Taquitos with Pico de Gallo and Avocado Cream Sauce, and Margarita Cheesecake Mousse.

Our first Bourbon Tasting is in the books! We had so much fun with our guests at Riverside Roadhouse on Saturday. Heidi truly outdid herself with the BEST bourbon pineapple-glazed pork tenderloin I have ever tasted. Grilled veggies, smoked cheeses, sweet and savory pecans added to the deliciousness. Bourbon cheesecake with a chocolate crumb crust and drizzled with bourbon caramel and homemade biscuits rounded out the sweet treats. Heidi shared her knowledge of bourbons and made excellent pairing suggestions. We featured the Bourbon Sidecar cocktail as well and I think I have a new favorite drink! Thanks to everyone who joined us and made our day so much fun!

Back to back Blenker Construction events last week -- we provided Smoked Salmon Cucumber Bites and two varieties of flatbread for their design class. We came back the next day to make a delicious beef tenderloin served with stuffed cabbage over basmati rice and baked asparagus. We finished with a Raspberry White Chocolate Cake. Beef tenderloin is seasoned with flaky salt and herbs and roasted to perfection. The cabbage is stuffed with a blend of mushrooms, onions, rice, and herbs and is topped with a fire-roasted tomato sauce. The asparagus is tossed in an olive oil-lemon mixture that really brightens up the taste. Decadent white cake with raspberry sauce in between the layers, topped with white chocolate butter cream frosting and extra raspberry sauce. Yum!

Bourbon Tasting and Pairing Event

11:00 am - 12:00 pm: Open cocktail hour with special event pricing for ticketed guests.

12:00 pm - 2:30 pm: Bourbon tasting with light lunch pairing.

2:30 pm - close: Cocktails with special event pricing for ticketed guests.

Tickets are $50.00 each and include four bourbons and lunch. Call Heidi (715-650-7200) or Stephanie (715-459-7576) to reserve your tickets (preferred). Tickets will also be available at the door.

Had some fun with my family this weekend! They agreed to come over and taste some new recipes for me -- pictured are the Cajun Shrimp appetizers. Cajun shrimp on a cucumber slice with creamy avocado -- so flavorful but not too spicy! I also made a pork loin with a bourbon pineapple BBQ sauce and baked asparagus. Got some great feedback and am looking forward to incorporating these dishes into future bookings! Thanks, Family!

We started March out making supper for the guests at Grace Lutheran's Dinner Theatre. They enjoyed pork loin stuffed with herbed mushrooms and onions, roasted red potatoes, and a mixed greens salad. Great performance of "How I Met Your Mummy" by the Grace Players paired with fantastic food from Bread Basil Butter -- winning combination for a great night out!

February events at Blenker Construction...Appetizers for the Design class included BLT stuffed tomatoes, Sweet Monkey Bread, and Bacon-wrapped Shrimp Skewers. Then for the Sip & Savor Personal Chef event, we started with Green Salad with Home-made Vinaigrette, then paired Walnut-Parmesan Encrusted Chicken (not pictured) and Sweet Potato Gnocchi with Bacon Butter Sauce for the main course. On January 30, we had our first 2025 Sip & Savor event at Blenker Construction. We started with a home-made cream of mushroom soup (not pictured) -- just makes you want to snuggle up and by cozy on these cold days! Main entree included blackened chicken and/or blackened cod -- my own blackened seasoning-- so much flavor with just a little bit of heat and lemon cream sauce to finish the flavor! Wild rice and honey-glazed carrots completed the plate. We tried a new dessert -- cannoli dip with waffle cone pieces. Judging by the very few leftovers, I'd say this meal was a hit!
