This winter break allowed Chef Gus to Test in the Baking Lab*. Which is really our home kitchen. In 2024 we tried sourdough which didn't work as expected! So with a generous gift of a working starter from a friend this year, Gus finally got a usable loaf of sourdough bread! It didn't make it long since it was so yummy, next we are going to add some flavors but the hard part is deciding what to put in it!! Any suggestions?

To Chef Gus, a "day off" is really just a change of scenery for the palate. While the professional kitchen might be quiet, R&D is currently in full swing at the home bar.
​Today’s "research" involves a few of our favorite bottles from our friends at Ledgerock Distillery . We’re testing the limits of their 100-Proof Corn Whiskey to refine our signature flavor profiles. The result of this session is The Copper Drone—a drink that is refined, local, and down-to-earth (and much easier to perfect when you're in your own living room).
​The heavy bitters react with the corn whiskey base to create a masterful design in the glass, resulting in that signature copper glow.

​The Recipe:
​2 oz Ledgerock 100-Proof Corn Whiskey
​1 tbsp Local Honey (diluted to syrup)
​1 tbsp Fresh Lemon Juice
​1 tsp Simple Syrup
​5 Dashes Aromatic Bitters
​Method: Shake vigorously with high-density ice for 12 seconds. Double strain into a chilled coupe.
