How have you been?
After starting our crêpe cookbook, we enjoyed some time at the Dells in WI.
It’s always inspiring to see what other restaurants are doing.
Audrey always studies everything from the decor to the menu, the seating and the customer service…
She takes SO many pictures. It’s infuriating!!😤

We were reminded that people aren’t looking for complicated cuisine. They love a classic that is well-executed and with a unique twist!!

Now, we are back working on our cookbook and experimenting with a new crêpe batter made with oats and brown rice flour.
The texture is different but pleasant! And it goes well with savory and sweet fillings.

Crêpes are a nutritious and delicious option.
But what if I don’t have a crepe maker??

There are several fillings that you can finish baking in the oven.
Especially crêpes made with Béchamel sauce such as this one.
We fold and roll them with the seams down.

I made good use of my free time while the thunder and rain kept me inside.
I am making great progress with the savory crêpe cookbook.
Who knew ?!!
Plus, our girls got to place their order for a savory crêpe😊
I made mine plant-based with our pizza sauce, dairy-free cheese, mushrooms and bell peppers and it was delish!

I am making slow progress. But, I am excited to offer 3 recipes for crepe batter, 5 recipes for sauces and 20 recipes for savory fillings. Some recipes even have wine pairings. 🤭

Plus, a chapter on the right techniques from cooking to folding.

Since, I am not cooking as much right now, I thought... why not write a COOKBOOK?

I am thinking of starting with savory crepes and then, quiches.
Each cookbook will include recipes for several fillings, gluten-free, dairy-free and low carb versions. Most recipes are adapted from renowned chefs. I would also like a page or 2 regarding the right techniques with more pictures.

Maybe a short mention of the origins of this French food and a cultural note.

Happy July 4th!!
May we all ponder the gift of our freedom today. I (Audrey) truly celebrated having a FREE day. I went on a bike ride with the family at 8.30 am this morning!! This wasn’t my choice and it made me think...

The girls wanted to ride their bikes, they were free to do so.
Yet, they couldn’t. Unless dad or mom get the bikes and drive them to the nice trails, their freedom is much limited by their ability.

Freedom minus ability loses its power.
So, may we all do something today to enable someone else enjoy their freedom!
I also chose to make a healthy version of a cherry pie bar made from our one cherry tree in our backyard!
Last weekend, I also made tons of GF and DF cherry muffins.
I can’t help it!
For me, it is the healthier kind of baking I love best which enables more people to enjoy the food. I also truly believe that when using quality, fresh ingredients, made from scratch, with less sugar, the flavor is MUCH better.

We are practicing the pause by giving ourselves time.
Time is a gift, not to be rushed or we risk losing the benefits.
Time to rethink and refine our vision for the future.

Audrey spent half a day tweaking her business plan.
It was fun but also a bit difficult as there are so many directions we could take this business to.
Audrey has so many ideas that could keep her busy for the next 20 years.

There are areas of tension like wanting to serve nutritious foods and stunning pastries, offering a certified gluten-free kitchen, doing baking classes, mastering the classics, offering unique creations and starting with a small space. Should we change the name??

There are many voices and desires within us.
Taking time brings more clarity to start well.
We do not have a timetable for getting a brick and mortar location and it’s a… good thing.
Even if Audrey wishes she could start NOW, she knows she isn’t ready yet.

A sweet (or savory) food makes for an easy gift that is always appreciated. How many families will gather around a festive meal to celebrate dad?!
We are SAD to miss the chance to make a special, edible gift for all the fathers this Sunday...

One thing we saw online was a 2-foot-long chocolate eclair from Orland Park bakery in Chicago.
What a brilliant way to share a light dessert with all the family!!

When a MISTAKE turns into a DISCORERY!!
I (Audrey) wanted to turn the French iconic, rustic madeleine into a dessert. But HOW?

I figured if I pick a fancy flavor like COFFEE and chocolate covered espresso beans, that might help.
Plus, if I dip the madeleine in CHOCOLATE that is an improvement. Finally, what if I made a whipped ganache to put inside, that would do the trick!

However, I couldn’t find the right piping tip… You know the one we use for adding cream to choux… I was sure I had one somewhere. Argh!! I got frustrated and stopped looking for it.

Instead, I ended up cutting the top of the madeleine
(which I don’t like anyway because they can have cracks due to the steam having no place to escape) and adding the ganache inside like a sandwich.

This is my first try, so they aren’t perfect but I already have a better idea for next time.
These madeleines are gluten-free and moist. They make a perfect base for a light cake. The ganache keeps the madeleines moist longer too.
