I am on a Saccorosso kick from Caputo Flour. It's soft tipo 00 mixed with a course Tipo 1 makes a beautiful loaf. Who knows what I'll use next week though!

New bread just came out from us. A 1-3 mixture of Caputo Saccorosso and Tipo 1. Naturally leavened and of course wood fired! Still soft but has a nice grain taste to it.
