Lamb Shank Osso Buco

When I first started cooking professionally this dish was on the menu for a long time. It was always a wonderful crowd pleaser , but primarily made with veal. The lamb packs a very nice punch as well.

I can't thank you enough for your support prayers and encouragement down through the years. In fact, many of you have known me all of my life. If you know me, you know my love for food, and my advocacy and passion for the Culinary Arts & Sciences.

The James Beard Foundation; best known for its coveted award after its name sake. Aka " The Oscars of Culinary" a non profit orgazational foundation like know other. Their advocacy for food culture transcends words or description on so,so many levels along with Colossal, a non profit who inspires and encourages youngsters to reach for their dreams through multiple artforms.

Having said all that, I'm a contestant one more gin this 2025 season. Your votes for me helps me get closer to my goal of winning, enabling me to carry the torch to the next generation of culinarians through advocacy and coaching and much.more. Voting begins tomorrow March 31, 2025 I truly am humbled and honored as I stand on the shoulders of so many giants of this amazing pathway and industry. Nasimo stands for "Never assume someone isn't a masterful overcomer", these are the words that form this brand and saved the life of Chef Gerald McCoy. The name combines Naomi and Simone his two loving daughters and the words signify his triumph over a 25-year addiction. He found solace in their names during a heavy night of gambling, nearly losing it all, and finally, he made the choice to change for the love of his wife, children, and his craft. Then is when NaSimo was born.

Nasimo is an eclectic infusion of different cultural cuisines, sauces, soups, and fresh organic farm to table ingredients. Chef McCoy's years of culinary experience as well as instructing in the culinary arts led him to create a fusion of cultural foods and classic traditional dishes into new versions for today. His versatility in culinary styles is profound. Nasimo Food Project also caters to multiple events and occasions and prides itself on the love that's put into every creation. It also has outreach programs giving back to the community because Chef McCoy believes that where much is given much should be given in return.
