🍳 High-Protein Mediterranean Scramble
Perfect for fueling your morning! 💪
Ingredients:
- 2 large eggs, beaten
- 1 cup fresh spinach, roughly chopped
- 1 small Roma tomato, diced
- 1/4 cup sweet onion, finely chopped
- 2 oz Greek feta cheese, crumbled
- 2 slices turkey breast (deli-style)
- 1 slice artisan sourdough bread
Instructions:
1. Heat a non-stick pan over medium heat with a drizzle of olive oil.
2. Sauté the sweet onion until translucent (2-3 minutes).
3. Add diced tomato and cook for 1 minute.
4. Toss in the spinach and let it wilt.
5. Pour in beaten eggs and gently scramble everything together.
6. Toast the sourdough until golden.
7. Serve the scramble hot with feta cheese, turkey breast, and toasted sourdough on the side.
8. Salt to taste.
