Garlic scapes! What are they? They are the curly whips that the garlic plant will produce as it gets ready to flower and go to seed. It takes a lot of energy for a plant to flower, which is why we interrupt the process, by harvesting the scape. This allows energy to go back into the bulb one last time before it is harvested. Scapes have a short window of when they are available (which we're currently in). Garlic scapes are extremely versatile! You can add them fresh to dishes (soups, salads, breads, stir fry, sauces), saute them, or add them to any dish you would use garlic. You can definitely buy them now to preserve for future use as well, add them to butter or oil for the freezer, or dehydrate them for garlic scape salt (which goes great on everything). 🧄
