That Thai Food Topic For Today is…….Noodles! Many people know the tangy noodle dish with bean sprouts, egg, protein choice and just the right heat called pad Thai. Pad see ew (pad see you) is a savory recipe with wide rice noodles, protein, and broccoli all stir fried together in a blazing hot wok. Drunken noodles (pad kee maow). Is savory with wide noodles, bell pepper, carrot, cabbage, and protein choice all stir fried together. Jan 25, 2020 Bee and Kevin went to the bank parking lot in Longmont to meet their “contact”, and adopted their first kaffir lime tree. She was only 10” tall and SOOOOOO Cute! She is named Kaffy, and has done well in the 5 years since she joined us. Now 5’ tall, with many siblings nearly as big as she is! Maybe next spring for blossoms? We are open today from 11-8:30 at 418 E Simpson St. 303 523 9623 to call in an order, or online at www.beesthaikitchen.com

A few years ago, when the kids were quite a bit smaller, and Kevin was still willing to lift heavy things, our friend Peter Jauman requested an unique dining table to be made from one of the oldest and largest trees in Denver, which had reached end-of-life. Kevin thought he had milled a couple of extra “rounds” for the project, and recently found them in remarkably good condition within his collection of “pieces of wood he might need someday”. We will begin to make two new tables for the Bee’s Thai Kitchen dining room similar to the original design for Peter. :-)

Let’s talk about snacks today. Chicken potstickers are popular, as are Chef Bee’s chicken curry puffs. The crispy tofu is delicious with the peanut/sweet&sour sauce, and is vegan. Samosas are a hit with the chicken-potato filling, and a touch of Indian curry for zing. 303 523 9623 to phone in an order, or online at www.beesthaikitchen.com

The Kobucha squash plants seem to be doing well, and we will start training them to grow up the wall. Kobucha squash are the type of pumpkin we use for pumpkin curry. Good morning! Today we congratulate our friends, Decha, Care, Canna and Caitlyn on the launch of their food truck, Thai Taste Truck! (https://www.facebook.com/profile.php?id=61572214082575 ) Chef Decha has prepared delicious Thai food at Aloy Thai in Boulder for many years, and this Summer launched his own venture with his family. We had the orange chicken, “Decha wings”, and coconut shrimp. Absolutely delicious! Prices are quite reasonable, and portions are generous. They serve in two locations: M-F they are at 530 S Lincoln Ave, Loveland, 80537. Then on Sat-Sun, they are at 840 Mountain Ave, Berthoud. The number to call in an order is (425) 208 9571. Still working on their website and online ordering. :-)

Good morning everybody! Today we are open and serving from 11-8:30 at 418 E Simpson St. 303 523 9623 to call in an order, or online at www.beesthaikitchen.com . How about a 1 year update on battery/solar operation of our food truck, Pad Thai Prime? Well, so far, so good.
We designed the system to provide independent power for all of our needs for about 4 hours, back when we only did brew-pub patios from 4-8 pm. With only 4 hours of use, the system was easily able to provide reliable power to meet our needs. However, our service hours have evolved to 11-8:30, or 9 1/2 hours per day. On many days the system can still provide power until the end of the day. However, the heat does make our refrigeration systems work harder (using more electricity), while the afternoon clouds we have most days this summer are limiting how much solar power we can get during the dinner rush. We find that our batteries run low about 6:30-7:00 pm.
This could be remedied by adding a third 100 amp/hour battery, but at $1500 we can get by without it for now. All in all, we have learned a TON about how to design, shop for, and use “off grid” technology, and find it actually more reliable than XCEL.

Good morning everybody! The Thai food topic of the day is…..rice! In its many forms. Chef Bee uses Thai jasmine rice (Thai hom malee) to accompany most stir fries, and fried rice dishes. This is a cultivar unique to Thailand, and it grows nowhere else. Glutinous, or sticky rice is a different variety and it is cooked differently depending on its use in the meal. Not every Thai restaurant has sticky rice on the menu, and the rice must be steamed and then packed into single servings to eat with grilled meats. The idea is to pinch off a bit and Hold it with a meaty bit for a bite on the go. Sweet sticky rice is similar, but steamed with sugar and coconut milk. Chef bee also infuses hers with pandan leaf for a more aromatic flavor. It is served with coconut crème, fresh fruit, or taro Thai custard among other treats. Good morning! Tropical fruits season is in full swing at the local Asian markets. At Great Wall in Broomfield, and H-mart in Westminster, you can now find fresh lychee, longan, rambutan, cheremoya, jackfruit, and even durian. Here is a little video about how to peel and ear rambutan (Ngah in Thai). We are open today from 11-8:30. 303 523 9623 to call in an order, or online at www.beesthaikitchen.com

Some progress on long term projects, from seeds: top left, lychee, dragonfruit, butterfly pea, cheremoya, and jackfruit (bottom left). The hail alternating with blistering heat, and violent thunderstorms have been unhelpful so far this year, but the babies are still growing 🙂. Good morning! Today we can give an update on Bee’s kitchen plans. We are currently responding to 7 pages of comments from City of Lafayette on our plans to build in a commercial kitchen. We will put the plans up on the wall at the restaurant as well. Addressing the current comments will take a couple more weeks. Then the City must review again. We are waiting for the architect to provide complete plans to Boulder County Health in order to get preliminary health department approval for the kitchen. We are open today at 418 E Simpson from 11-8:30. 303 523 9623 to call in an order, or online at www.beesthaikitchen.com
