And just like that, it's an official wrap! These last 7 years have been quite a ride. We had the pleasure of meeting some great people and visited some fantastic place! Times have changed in those short years and the food truck industry has BOOMED but it's no longer for me. I hope and pray each and every one of you have an opportunity to make your dreams happen and I will cherish the memories. I've had MANY requests for our sauces so we'll be working on having them available for purchase by next spring. Stay blessed!

A final date and location still needs to be secured for a final HOORAH. That will be a pre-order pre-pay event to buy in bulk.

And that's all folks! What a great ride it has been! We are so incredibly grateful for those that have stuck by us throughout the years! Every encounter with guests has been a great experience and you mean more to us than you will ever know! During this adventure I have met some incredible people, some of my children learned work ethics, customer service skills and problem solving in a work environment that carried on with them into other jobs which helped them to stand out in a positive way and I was able to sustain my passion for BBQ. There were good times and times I could've done without but we endured them with a grain of salt and just kept pushing forward with God as our main focal point. To the staff that has come and gone over the years, I can GUARANTEE that you are and always will be remembered! Your light and personalities brought something unique to our mission and I appreciate you still!

There have been some discussions on the next season and possibly continuing but only for town events, festivals and private catering. As of this time, nothing has been decided 100% one way or another. Once it gets figured out, we will make the announcement.

When I hear someone comment how expensive a Brisket Sandwich is at different bbq places I just think to myself " If you only knew why". 2 of my briskets I'm cooking weight a combined total of 44.36 lbs. Of that weight, the hard fat I trimmed off is 13.01 pounds (still leaving a protective layer to render during the 18 hour cook so about 4 pounds). So of that original 44.36 pounds, about 17 pounds is fat. During the cook, the weight of servable meat drops even lower, depending upon how much fat actually renders.

I used Sams Club because it's pricing is available online and the other stores aren't so open about it

Sams Club choice per lbs is $4.18. So $71.06 in fat

So that would be $185.43 for 2 choice briskets and $71.06 of that purchase is initial fat waste off the top. This doesn't include additional product shrinkage during the cook, cooking fuel, seasoning and any supplies used for cooking in addition to the pit masters time to trim, seasoning, monitor, wrap, slice, ect. This is only 1 breakdown. Most bbq places use prime or waygu now. That bumps the cost up even more. Also, using a product delivery service is NOT cheaper. Most times in my experience, it's actually more expensive due to other costs for this convenience of delivery. You also have no idea what the briskets will look like when you open the cases and it's a real crap shoot on how much fat there will be on each one.

Putting all this together for folks that say " I can cook one at home for cheaper", I can tell you that you might be able to and congratulations if it turns out like you anticipated it would. I enjoy a good Brisket Sandwich from time to time and am one of the last people that'll question the price of a Brisket meal when I go somewhere. Busy day for True Smoke BBQ - Catering/Food Truck today. First we start off opening our window for the final day of Kasson Festival in the Parkat 11 a.m. till 3pm. At that time we lock and load to head to Rochester Public Music to serve at the final music showing down at Mayo Civic Center where we'll be serving from 5pm - 8:30 p.m. We hope to see you at one of our locations today!

Good morning y'all! Our schedule is coming to a close pretty fast for True Smoke BBQ - Catering/Food Truck. Here is a list of places we will be the next few weeks. After that the schedule drops significantly as the BBQ trailer goes up for sale. I am NOT the seller as I own the business and not the trailer itself so I am unable to discuss pricing and sales information with any potential buyers. CTO (smoker) located on the trailer currently will be sold separately as that is mine and will be available once my season is complete.
