I am honored that God has chosen me to do life with you. You are deserving of true happiness and joy and I pray that God continues to give me the direction and the grace to give you all that you deserve. You’re a woman of noble character and should be treated and loved as such. Your beauty is one of a kind and God allows you to light up any room! In honor of Black History Month, every week we will be highlighting a black chef who has pioneered the way for young black chefs like myself to fulfill our call of service in the culinary world!

First up, one of my favorites and inspirations, Chef Leah Chase.

Leah Chase, also known as “The Queen of Creole Cuisine,” opened Dooky Chase’s Restaurant in the 1940s, at a time when the city's segregation laws made it illegal for Black and white customers to dine together. The restaurant, which she ran with her husband Edgar "Dooky" Chase II, also became a meeting place for civil rights leaders and their allies — and later, fed creole cooking to President Barack Obama. Chase also wanted to offer Black customers a spot to not only enjoy the foods they loved, such as her famous gumbo and chicken Creole with jambalaya, but to provide an "elegant, dignified experience of enjoying good food and company.” She ran her restaurant and cooked up until her death at 96 in 2019. Chef Chase was always known for her wonderful collection of African American art on the walls of the Dooky Chase Restaurant. Instead of white, Chef Chase wore a collection of red, pink or Orange chef coats!
