✨Golden Crispy Fried Chicken✨ 🍗

Ingredients:

1 family pack chicken legs
2 tsp salt
1 tsp black pepper
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp Sazon seasoning
1 tsp paprika (optional for extra color)
1 tsp turmeric
2 tbsp yellow mustard
3 tbsp hot sauce
2 cups Autry Chicken Fry Breading
1 cup all-purpose flour
1/4 cup cornstarch (for extra crispiness)
Canola oil (for frying)

Instructions:

Step 1: Clean & Prep Chicken
Clean and wash chicken thoroughly. Pat dry completely using paper towels. Removing excess moisture helps the breading stick better and creates a crispier texture.

Step 2: Marinate Chicken
Place chicken into a large bowl or deep pan.
In a separate bowl, combine:
* Mustard
* Hot sauce
Mix well and pour over chicken. Massage evenly into all pieces.

Step 3: Season Chicken
In a small bowl, combine:
* Salt
* Black pepper
* Onion powder
* Garlic powder
* Sazon seasoning
* Paprika
Mix seasonings together well and evenly season all sides of the chicken.
Cover and refrigerate for 30–45 minutes to marinate for best flavor.

Step 4: Prepare Breading
In a large bowl or pan, combine:
* Autry Chicken Fry Breading
* All-purpose flour
* Cornstarch
* Turmeric
Mix thoroughly until fully combined.

Step 5: Heat Oil
Add canola oil to a deep frying pot or deep skillet.
Preheat oil to 325°F–350°F. Maintain temperature throughout cooking for the best golden crispy results.

Step 6: Bread Chicken
Remove chicken from refrigerator.
Coat each piece thoroughly in the breading mixture. Press flour mixture firmly onto chicken for a thicker crispy coating.
For extra crispy chicken:
* Let breaded chicken rest for 10 minutes before frying.

Step 7: Fry Chicken
Using tongs, carefully place chicken into hot oil away from you to avoid splashing.
Do not overcrowd the pan.
Fry chicken for approximately:
* 12–15 minutes depending on size
Turn occasionally until chicken is:
* Golden brown
* Crispy
* Cooked to an internal temperature of 165°F

Step 8: Drain & Rest
Remove chicken from oil and place onto a wire rack or paper towel-lined tray to drain excess oil.
Allow chicken to rest for 5 minutes before serving.

Tips for the Best Fried Chicken
* Use a wire rack instead of stacking chicken to keep it crispy
* Cornstarch helps create extra crunch
* Turmeric and paprika help create a rich golden color
* Keep oil temperature steady to avoid greasy chicken
* Double fry for restaurant-style crispiness:
* First fry at 325°F
* Rest 5 minutes
* Fry again at 350°F for 1–2 minutes

Homemade Banana Pudding 🍌

Ingredients:
Banana Pudding
bananas, sliced
mini vanilla wafers
vanilla extract
sweetened condensed milk
whole milk
French vanilla instant pudding
banana cream instant pudding
Homemade Whipped Cream
heavy whipping cream
powdered sugar
vanilla extract

Instructions:

Step 1: Make the Homemade Whipped Cream
1. Add heavy cream and vanilla extract to a chilled mixing bowl.
2. Using a hand mixer (or whisk), begin whipping the cream.
3. Slowly add powdered sugar while mixing.
4. Continue beating until soft to stiff peaks form.
5. Set aside in the refrigerator.

Step 2: Make the Pudding Mixture
1. In a large bowl, combine the French vanilla and banana cream instant pudding mixes.
2. Add 2 cups of whole milk and whisk for about 2 minutes.
3. Let the pudding stand for 5 minutes to thicken.
4. Add the sweetened condensed milk and vanilla extract.
5. Fold together until smooth.
6. Add 3 cups of the homemade whipped cream and gently fold in.
The pudding should be creamy with a smooth consistency — not too runny and not too stiff.

Step 3: Assemble the Banana Pudding
1. Layer mini vanilla wafers in the bottom of your dish.
2. Add sliced bananas.
3. Spread a layer of pudding mixture.
4. Repeat the layers one more time.
5. Top with crushed vanilla wafers.

Step 4: Chill & Serve
Refrigerate for at least 1 hour before serving.

Seafood Pasta Salad 🦀🍤

Ingredients:
Pasta Salad
Rotini noodles
Shrimp
Jumbo lump crab meat
Red onion, diced
White onion, diced
Celery stalks, diced
Green pepper, diced
Red pepper, diced
Serrano peppers, diced
Shrimp Seasoning
Cajun seasoning
Old Bay seasoning
Garlic powder
Pasta Water
4 chicken bouillon cubes
1 tbsp garlic
Dressing Ingredients
40 oz mayonnaise
1/2 cup yellow mustard
1/4 cup Dijon mustard
1/4 cup spicy brown mustard
1/4 cup lemon juice
1/4 cup Old Bay seasoning
1/4 cup garlic powder
1/4 cup onion powder
1/4 cup Salad Supreme seasoning
2 tbsp salt
1 1/3 cup sugar

Instructions:

Step 1: Prepare the Shrimp

Wash and season shrimp with Cajun seasoning, Old Bay, and garlic powder to taste.
Let marinate for 15–20 minutes.
Heat 2 tbsp olive oil in a skillet.
Sauté shrimp for about 1 1/2 minutes per side.
Remove from heat and set aside.

Step 2: Prepare the Crab Meat

Melt 3 tbsp butter in a skillet.
Add jumbo lump crab meat.
Lightly season with Old Bay seasoning to taste.
Warm gently, then set aside.

Step 3: Cook the Pasta

Bring a large pot of water to a boil.
Add 4 chicken bouillon cubes and 1 tbsp garlic powder.
Add rotini noodles and boil for about 6 minutes or until tender.
Drain pasta and chill until ready to use.

Step 4: Prepare the Vegetables

Dice:
Red onion
White onion
Celery
Green pepper
Red pepper
Serrano peppers

Step 5: Make the Dressing

In a large mixing bowl, combine:
Mayonnaise
All mustards
Lemon juice
Old Bay seasoning
Garlic powder
Onion powder
Salad Supreme seasoning
Salt
Sugar
Mix thoroughly until smooth and well combined. (Taste and adjust as needed)

Step 6: Assemble the Pasta Salad

In a large bowl combine:
Chilled rotini noodles
Diced vegetables
Shrimp
Jumbo lump crab meat
Pour dressing over pasta mixture.
Toss until everything is fully coated.

Step 7: Chill & Serve

Refrigerate for at least 1 hour before serving.

Best served chilled. Enjoy! 🦀🍤✨

TBSP of garlic powder
TBSP of onion powder
TBSP of Cajun seasoning
TBSP of Paprika
TBSP of old bay

TBSP of parsley
1/4 cup of sugar
TSP of crushed red pepper
TSP of lemon juice
1 CUP of chicken broth
