🌷 Easter is almost here, and I’m dreaming up our Sunday dinner!

This Fresh Milled Dutch Baby Pancake is one of the easiest breakfasts you’ll ever make — and it feels so special when it comes out of the oven!

✨Golden crispy edges… a soft custardy center… and the beautiful puff that climbs up the sides of the pan.

Made with fresh milled soft white wheat, it has a lightly nutty flavor and more nourishment than traditional pancakes. And if you keep a sourdough starter, it’s also a delicious way to use a little sourdough discard. šŸ’›

When wheat berries are ground into flour, something amazing happens. The bran, germ, and endosperm are all together just as nature designed — full of natural oils, vitamins, minerals, and flavor.
But here’s the part most people don’t realize…

ā³ Flour begins losing nutrients within hours of being milled.
That means the flour sitting on grocery store shelves is often 6–12 months old before it ever reaches your kitchen.

Sunday night is family meeting night around here, which means planning the week ahead… and of course dessert. šŸŖāœØ

After we sit down and talk through the week on the farm, we love to end the night with something warm and cozy before relaxing together.

Tonight’s treat? A gooey Pizookie baked in a cast iron skillet. Crispy on the edges, soft and melty in the middle, and the best part… it only uses one dish. Don’t forget a scoop of ice cream on top!

I wasn’t sure a fresh milled sourdough pie crust could actually be flaky… but wow was I wrong.

This crust is:

Have you gone down the fresh-milled flour rabbit hole? 🌾✨ Because once you learn a few of these things… it’s hard to forget them.

Here are some fun facts that totally changed how I look at flour šŸ‘‡

🌾 Whole wheat berries can store 20–30+ years if kept dry and sealed properly.
But once you mill them into flour? Nutrients start declining within hours. That’s why fresh really does matter.

🌾 When flour is commercially processed, the bran and germ are removed to extend shelf life.
But that’s also where most of the fiber, healthy fats, and vitamins live.

🌾 Those natural oils in the germ?
Yes, they make fresh flour go rancid faster… but they’re also what make it so nutrient-dense and flavorful.

🌾 Fresh milled flour is naturally higher in fiber — nothing has been stripped away.

🌾 It absorbs more liquid than store flour, so recipes usually need a bit more hydration and sometimes a short rest time to fully soak it up.

🌾 The flavor is completely different. Richer. Nuttier. More ā€œgrain forward.ā€ Not bland and neutral.

🌾 It’s technically 100% whole grain — no enrichment needed — because nothing was removed in the first place.

🌾 Letting fresh milled flour rest 15–30 minutes before baking (autolyse) makes a huge difference in texture and structure.

🌾 Different grains = different results.
Hard red = higher protein, amazing for bread.
Hard white = milder flavor.
Soft wheat = lower protein, perfect for desserts.

This isn’t about being trendy or crunchy. šŸ’›
It’s just about understanding what flour actually is… and what’s been taken out of it over the years.
