Put those decorative pumpkins to use! With just a little effort, you can get a generous amount of nutritious fresh pumpkin for all your favorite pumpkin recipes.
Follow these steps to freeze pumpkin or other winter squash:
Cut the squash in half and scoop out the seeds. Place the squash halves cut-side down in a baking dish and pour in 1/2-inch of water.
Bake in a 400 F oven until the flesh of the squash is completely cooked and the peel is starting to show a few brown spots. This will take 40 minutes to one hour.
Turn the squash over and let cool for 10 minutes. Scoop out the cooked flesh with a spoon.
At this point you can freeze the cooked squash as is, but we suggest pureeing it first either using a food processor or by mashing thoroughly with a potato masher. Pureeing the squash first gives you a ready-to-use product later on. Do not add liquid when you puree the pulp.
Pack the cooked squash into freezer bags and store the bags horizontally for the most efficient use of freezer space. Alternatively, pack the squash into upright freezer containers leaving one inch of headspace. Either way, measure the squash before freezing it and label clearly with the amount.

Honey Glazed Carrots
Ingredients
• ▢2 lb carrots
• ▢2 tbsp olive oil
• ▢3-4 garlic cloves minced
• ▢2 1/2 tbsp honey or maple syrup
• ▢1/2 tsp kosher salt or to taste
• ▢1/4 tsp fresh ground pepper or to taste
• ▢Chopped fresh parsley to garnish
Instructions
1. Preheat the oven to 400F.
2. Peel and slice the carrots diagonally into about 2-inch pieces.
3. Place the carrots to a large bowl. Add oil, garlic, honey/maple syrup, salt and pepper. Mix well until all pieces are evenly coated.
4. In a large non-stick baking pan arrange the coated carrots in a single layer.
5. Place into the preheated oven and bake for about 15-20 minutes, or until caramelized and tender.
6. Transfer to a serving bowl and garnish with fresh chopped parsley.
