✡️ THE STORY OF PASSOVER — THROUGH FOOD

Passover is one of the most powerful and enduring traditions in the world—
a story not just told with words, but with food.

It begins thousands of years ago, in ancient Egypt.

The Israelites lived in slavery, bound by hardship and oppression, until the moment history turned—the Exodus. Led by Moses, they were freed, leaving behind everything they knew in a journey toward freedom.

There was no time for bread to rise.
Only unleavened dough—matzo—was carried into the unknown.

And from that moment… a tradition was born.



🕯️ THE SEDER — A TABLE OF MEMORY

Each year during Passover, families gather for the Seder, a ceremonial meal that retells this story.

But instead of simply speaking it…
they experience it.

At the center of the table sits the Seder plate—a symbolic collection of foods, each carrying a deep meaning.



🥚 THE SEDER PLATE — WHAT IT HOLDS

Every item is intentional. Every detail matters.

🥚 Egg (Beitzah) — Life & Renewal

A roasted egg represents the cycle of life and the continuity of tradition. Even after destruction, life continues.



🦴 Shank Bone (Zeroa) — Sacrifice

A reminder of the Passover offering made in ancient times. It symbolizes faith and devotion.



🍎 Charoset — Resilience

A mixture of apples, nuts, wine, and spices—its texture resembles mortar used by enslaved Israelites.
Yet it’s sweet.

This is the message:
👉 even hardship can be transformed into something meaningful.



🌿 Bitter Herbs (Maror) — Suffering

Often horseradish. Sharp, intense, unforgettable.

It forces you to feel the bitterness of slavery.



🌿 Parsley (Karpas) — Hope & Spring

Dipped in saltwater (tears), it represents both life and sorrow—growth through struggle.



Together, this plate becomes something extraordinary:

🍲 FROM SYMBOL TO SOUL — MATZO BALL SOUP

If the Seder plate is history…

Then matzo ball soup is the heart.

Simple. Humble. Comforting.

But deeply meaningful.

Born from the same unleavened matzo, this dish evolved through generations—
from necessity… into tradition.



🥣 WHAT MATZO BALL SOUP REPRESENTS

For me, pecans aren’t just ingredients.

They’re memory.

They’re that warm, toasted aroma hitting the kitchen before guests arrive.
They’re the crackle of caramelized sugar meeting roasted nuts.
They’re the balance—sweet, nutty, just a little bit of edge.

And then… there’s the finish.

A touch of Buffalo Trace bourbon—deep, smooth, with notes of vanilla and oak—folded right into the filling. It doesn’t overpower. It rounds everything out. It lingers just enough to make you stop and take another bite.

That’s where the tart crosses the line from classic… to unforgettable.

So when I build these pecan tartlets…

I’m not just making dessert.

I’m layering Southern tradition with a little bit of fire, a little bit of spirit—something that speaks to the roots of the South and the craftsmanship behind every great plate.

Somewhere between the salt air and the sun-soaked streets of Key West, Florida… there’s a flavor you never forget.

Real key lime pie doesn’t start in a kitchen.
It starts on the tree.

Small. Fragrant. Intense.

Key limes aren’t like the ones you see in most grocery stores. They’re sharper, more aromatic—bright with that unmistakable citrus punch that cuts through cream and sugar like a blade. That’s what gives a true key lime pie its soul.

Back in the day, before refrigeration, it was the fishermen and sponge divers of the Florida Keys who made this dessert famous. Sweetened condensed milk, egg yolks, and fresh key lime juice—no baking, just time and technique. Simple ingredients, built on necessity… turned into tradition.

Today, we elevate it.

Same roots.
Refined ex*****on.

A crisp graham crust.
Silky, balanced custard.
And meringue—piped with intention, torched with precision, finished with fresh lime zest that hits you before the first bite even lands.

This isn’t just dessert.

It’s Florida.
It’s history.
It’s craftsmanship on a plate.

Chef Avi’s Key Lime Pie



Fresh Key West Citrus • Classic Technique • Elevated Finish



🧾 INGREDIENTS

Crust:
• 1 ½ cups graham cracker crumbs
• ⅓ cup sugar
• 6 tbsp melted butter

Filling:
• 4 egg yolks
• 1 can (14 oz) sweetened condensed milk
• ½ cup fresh key lime juice 🍋‍🟩
• 1 tbsp lime zest

Topping:
• Whipped cream or meringue
• Fresh lime slices
• Extra zest for finish



👨‍🍳 METHOD
1. Build the crust
Mix crumbs, sugar, butter → press into pan → bake at 350°F for 10 min
2. Whisk filling
Egg yolks + condensed milk until smooth
3. Add citrus
Stir in fresh key lime juice + zest
4. Reduce the heat of your oven to 250°F degrees.
Pour the custard into crust → bake 10 - 15 min until just set.
5. Chill
Refrigerate minimum 3 hours
6. Finish
Top with meringue or cream → garnish with lime + zest



✨ CHEF NOTE

Real key lime pie is about balance—bright citrus, smooth texture, and just enough sweetness to let the lime shine.
