Founded by culinary duo (and soon-to-be husband and wife!) Edward Seals III and Kareta Thomas, The RiB Bone brings bold flavors, rich heritage, and heartfelt service to every plate we serve. And no – despite what you might think – “The RiB Bone” isn’t about ribs. The name is inspired by the biblical story of a woman created from man’s rib, symbolizing strength, unity, and divine partnership. For us, it reflects not just our love for each other, but also our shared passion for food, community, and culture. The RiB Bone is our labor of love – built from the ground up, side by side. Born during the challenging times of 2021 and hitting the road in 2023, The RiB Bone is a dream turned reality. With over 25 years of combined culinary experience, we bring history, soul, and authenticity to every dish. Edward honed his skills as head chef at his family’s beloved Dayton, Ohio restaurant, MaryAnn’s Southern Kitchen, rooted in the deep flavors of Homer, Louisiana. Kareta carries the powerful legacy of her grandmothers – legendary cooks who nourished and uplifted during the Selma civil rights marches. At The RiB Bone, we do more than cook – we create moments. Due to today's heat advisory, and the levels of heat inside the trailer because we cook fresh daily. The RiB Bone will not be in our normal parking lot and taking a break from the heat.
