If you guys didn't know, we at Mallard's BBQ pride ourselves on creating the absolute highest quality, best "Duckin'Good Bar-B-Que!" around the area. We take no shortcuts, painstakingly hand trim every cut of meat, spend countless hours smoking everything to perfection, then compliment it by making the entirety of our menu (minus 1 item) in house by hand. We have applied almost 15 years of learning and experience to mastering our very own rub and sauce recipes, as well as our techniques. Needless to say, the others around are imposters, not competition.

Also, some of you might have noticed we've been training a new employee. This weekend is Callie's first official week on her own! Come say hi and get to know her, she'll be running the show on Fridays and Saturdays from here on out! But be careful, she can be meaner than me... Not really though, she has been a great addition to the Mallard's BBQ family, she'll take care of you with the same top notch service you've come to expect from us!

We're going to be honest with yall here. In our efforts to provide the best brisket around, we have let the quality of our ribs slip. After listening to feedback from a few of our amazing customers, we decided to refocus on our ribs so we can provide a well rounded menu of nothing but the best! Over the past few months, we have tested several tweaks and variations on our rub and processes, and we're excited to announce that we have got everything nailed down! We now have a dedicated rib rub that we cut the salt content down on and altered the flavor profile to compliment the pork spare ribs we use. These bad boys are smoked to the perfect bite through tenderness with a flavor packed bark, then finished with a "candied" brown sugar glaze that makes them sticky, sweet, and finger lickin'! That said, we will be making an effort to provide only fresh ribs off thr smoker and will be cooking limited quantities daily. If you know you want some ribs for something, please call ahead and order the day before!
