Not to make light of this pandemic. BUT, one plus for me is being able to wear scrubs ALL DAY to hide my Covid-19 kilograms and to wear tennis shoes ALL DAY. I have a collection of Vans to rotate at the office and hospitals. Today, a mom of one my patients was sporting the exact same Vans I was wearing....glow in the dark skull ☠☠☠ Vans!

He for aguachile for his birthday, so...made 4 aguachiles for his B-Day. 1, scallop and shrimp tomatillo aguachile. 2, Ribeye aguachile. 3, Classic aguachile. 4, Mango aguachile....all with freshl, from scratch sweet potato hummus. Went overboard so neighbors had deliveries.

1st roll: CA roll.
2nd roll: IN mango/cucumber/cream cheese, TOP chipotle crema/toasted pepitas/cilantro.
3rd roll: IN tempura shrimp/asparagus/avocado, OUT crab surimi/kewpie mayo/eel sauce/green onions.

Ever since the Chargers left, I put a curse on them and stopped following football (havent seen 1 complete game since). So, today was yet another excuse to cook and watch some football and more commercials. Maybe...a big maybe...party for everyone 2022!!
