"Comfort in Chaos."

That's what was written on the kitchen sign that hung above the dining room door at the Oceanaire Seafood Room in San Diego.

As a 23-year-old line cook responsible for 6 entrees, 4 side dishes, and a tankful of live lobsters, this slogan helped keep me level under pressure.

Because when chaos reigned in the kitchen, I really had my hands full trying to keep my station clean, organized, and under control.

Part of my problem was processing the lobsters.

Because before a lobster went into the steamer to cook, it received a "coup de grace"... A sharp knife straight through the head that signaled the end of its long journey from Maine.

I was left with a workstation covered in cold, blue-grey lobster guts…

And a cleanup project that I wasn't looking forward to.

And after cleaning up the lobster guts that accumulated under my cutting board every night for months, I’d had enough.

I like this dish for many reasons, and so do my customers.

- It uses one of the most affordable cuts of meat (pork shoulder) to produce the most fork-tender, flavorful meat.

Say what you want about Gordon Ramsay, the spokesman for HexClad pans.

Even if he makes my blood boil when I see him on TV, I have to respect him now for choosing such a good brand to promote.

I never thought I'd find something better than my carbon steel pan, but I was in for a surprise. The Hexlcad pan is truly nonstick, retains heat better, and it's easier to maintain.

I started using my Hexclad 12-inch hybrid pan this year, and now I see why they call it "The Rolls Royce of Pans."

Here are 4 common reasons why chicken breast often turns out unappetizing:

As a young cook in New York City, food was my obsession. Of course, cooking high-end food was rewarding, but I was always drawn to the bold flavors of ethnic cuisines.

Take chicken and rice, for example. I'd walk into any Jamaican, Dominican, or Puerto Rican restaurant, and enjoy a shockingly tasty meal for only six dollars.
