When it comes to kitchen gear, you get what you pay for. And if you've ever owned a $25 Teflon pan, you've probably noticed how it deteriorates over time.

For a home cook, there's nothing more frustrating than cooking gear that lets you down. As popular as they are, you can't depend on Teflon pans to give you great results in the kitchen.

The real magic in this dish comes from one special ingredient - yellow curry paste.

It infuses the aromas of Southeast Asia into this dish with ingredients like ginger, chiles, and lemongrass.

I love how the curry paste suddenly makes my kitchen smell amazing right after it goes into the pan.

If you can’t find yellow curry paste, you can substitute Madras curry powder and add garlic, lemongrass, and ginger to the recipe.

For this recipe, I add my own special twist to whipped sweet potatoes - pumpkin pie spice.

Surprise - you don't need to wait for autumn because this spice blend tastes great all year round!

Pro tip: lightly toast the spice in a small pan for a deeper, more aromatic flavor.

For this recipe, I marinate chicken in a savory blend of spices, herbs, garlic, and olive oil.

Then I cook it on the grill to give it a delicious, charred flavor.

I use boneless, skinless thighs in my chicken recipes. Since it's affordable and versatile, I love using this cut of chicken.

And, with a good balance of protein and fat, it's much more flavorful than chicken breast.

In fine dining kitchens, the "saucier" held the most prestigious job in the kitchen.

Making great classic sauces like bordelaise or périgueux took all day:

- simmering
- straining
- reducing
- emulsifying
- tasting

Can you make them at home?

Of course!

But save those recipes for a special occasion.

Because "quick sauces" are the practical, time-saving alternative.

For meal prep, I rely on quick sauces to infuse my meals with bold flavors, while saving hours of time in the kitchen.

The chiles in this dish pack a punch - that's why I call it "firecracker" shrimp.

But you can be gentler on your taste buds by simply omitting the chiles.

You'll still taste all the great Southeast Asian flavors of ginger, garlic, and coconut that my meal delivery customers have been enjoying for years.

If a piña colada was food, it would be pineapple-coconut rice. The tropical flavors in this recipe make it fun to eat (even if there's no rum involved!)

For this recipe, I use a white miso paste (shiromiso) to create a simple dressing for whitefish with soba noodles.

A flaky white fish like cod or or halibut works best in this dish, although you can substitute any seafood you like. I like to serve this dish at room temperature, but it tastes good either hot or cold.

Why is it called "jerk" chicken?

The word jerk reportedly comes from the Spanish charqui, which means dried strips of meat; like what we call "jerky".

But there's nothing dried or jerky-like about this dish. The recipe uses a spiced glaze that browns and caramelizes as the meat cooks.

It's juicy and flavorful - perfectly paired with steamed basmati rice, and red or black beans.

With a few simple techniques, anyone can make this Caribbean glazed jerk chicken with rice and beans at home in just 1 hour.

As a cook, your skills are only as sharp as your knife is.

And since your knife is the most important tool in your kitchen, it's worth an investment if you cook a lot.

Consider buying a bed.

The last time I bought one, the salesman reminded me that I spend one-third of my life sleeping on a bed. Was I willing to sacrifice my quality of sleep to save a few bucks?

Of course not.

I invested in a great bed, and I've slept like a rock every night for the last 10 years.

If you love to cook (like I do), you'll get plenty of use out of your knife.

I use mine almost daily.

And by doing your research before you buy, you'll feel confident choosing the right one for you.

I serve this hearty dish with some crisp, bright-green broccolini that gets blanched and tossed with savory garlic butter.

Broccolini also tastes great when lightly charred on the grill instead of blanched. Is it grilling season yet? 🔥

This recipe recommends cooking chicken under an oven broiler, but you can also use an outdoor grill.

The oven broiler is a good option for year-round cooking when it's too cold to grill outside.

But if you use a grill, I recommend cooking the chicken halfway without the glaze, to prevent burning. Then brush it with glaze and finish cooking.

With a few simple techniques, anyone can make this Caribbean glazed jerk chicken with rice and beans at home in just 1 hour.

If you cook new recipes a lot, occasionally you'll stumble on a magical ingredient.

It will remind you of a restaurant dish you enjoyed, and you'll think, "Now I understand why it tasted so good. They added some of this!"

Miso paste is one such ingredient.

It's a Japanese condiment made from fermented soybeans. Its rich, salty flavor can be used as a base for soups, marinades, and sauces.

"Comfort in Chaos."

That's what was written on the kitchen sign that hung above the dining room door at the Oceanaire Seafood Room in San Diego.

As a 23-year-old line cook responsible for 6 entrees, 4 side dishes, and a tankful of live lobsters, this slogan helped keep me level under pressure.

Because when chaos reigned in the kitchen, I really had my hands full trying to keep my station clean, organized, and under control.

Part of my problem was processing the lobsters.

Because before a lobster went into the steamer to cook, it received a "coup de grace"... A sharp knife straight through the head that signaled the end of its long journey from Maine.

I was left with a workstation covered in cold, blue-grey lobster guts…

And a cleanup project that I wasn't looking forward to.

And after cleaning up the lobster guts that accumulated under my cutting board every night for months, I’d had enough.

I knew I’d have to find better ways to keep a workstation clean.

Having no choice but to learn organization skills, here's what I learned:

Practical strategies for becoming a faster, cleaner, and more efficient cook at home.

Stir-fry is the #1 most versatile dish that you can cook at home.

It reheats well in the microwave, and you can switch up the proteins to include chicken, shrimp, ground turkey, or ground bison.

I like this dish for many reasons, and so do my customers.

- It uses one of the most affordable cuts of meat (pork shoulder) to produce the most fork-tender, flavorful meat.

- The by-product of cooking this dish is a rich, versatile pork stock. (Pro tip: use it as a base for homemade soup.)

- The pork gives off a great aroma as it cooks, which will make everyone in your house ravenously hungry. Possibly your neighbors too. Don't say I didn't warn you.

Say what you want about Gordon Ramsay, the spokesman for HexClad pans.

Even if he makes my blood boil when I see him on TV, I have to respect him now for choosing such a good brand to promote.

I never thought I'd find something better than my carbon steel pan, but I was in for a surprise. The Hexlcad pan is truly nonstick, retains heat better, and it's easier to maintain.

I started using my Hexclad 12-inch hybrid pan this year, and now I see why they call it "The Rolls Royce of Pans."

The thought of another bland, dry chicken breast can make anyone quit meal prepping.

Here are 4 common reasons why chicken breast often turns out unappetizing:

- Not enough seasoning (salt, spice blend)

- No sauce, marinade, or glaze

- Slicing the meat before it rests (moisture bleeds out)

- Overcooking

But the real problem is the main ingredient itself.

People use chicken breast for meal prep because it's healthy and high in protein.

But when it comes to flavor, 𝘪𝘵 𝘫𝘶𝘴𝘵 𝘸𝘰𝘯'𝘵 𝘤𝘶𝘵 𝘪𝘵.

I use boneless, skinless chicken thighs in my recipes because they don't dry out easily. And they have a better balance of protein/fat that makes a much tastier meal.

This recipe brings back memories.

As a young cook in New York City, food was my obsession. Of course, cooking high-end food was rewarding, but I was always drawn to the bold flavors of ethnic cuisines.

Take chicken and rice, for example. I'd walk into any Jamaican, Dominican, or Puerto Rican restaurant, and enjoy a shockingly tasty meal for only six dollars.

In fact, those chicken and rice dishes were so good that it started to bother me.

Because at the time, I thought I was a pretty good cook. I thought, "This restaurant just knocked my socks off by making a stunning dish with cheap ingredients. Why should anyone pay $50 for my scallops and foie gras?

“What’s their secret?”

It turns out, there is none. Actually, all the ingredients for chicken and rice are easy to find, and very affordable. And by using some simple techniques, you can make this Caribbean glazed jerk chicken with rice and beans at home in just 1 hour.
