Helloooo fall soups🍁
Originally I was going to make Thai pumpkin soup but since canned pumpkin is hard to find right now, i came up with this instead. THAI SWEET POTATO CARROT SOUP 🍠 NOT mad. Sooo good. 🤤

Makes 4 servings👇🏼👇🏽👇🏿

2 tbsp coconut oil
1 yellow onion, chopped
3 cloves garlic, minced
1 tbsp fresh ginger, grated
2 to 3 tbsp Thai red curry paste
3 cups sweet potato peeled & diced
3 cups carrots peeled & diced
4 cups veggie broth
1/2 tsp S&P
1 cup full fat coconut milk
1 handful of fresh cilantro, chopped
1 lime, juiced
Heat oil in large pot, add onion, garlic and ginger. Sauté for about 5 minutes until onion is translucent. Stir in red curry paste along with sweet potatoes, carrots, veggie broth, salt and pepper. Bring soup to boil then cover and simmer on medium-low for about 20 minutes, until sweet potatoes are fork tender. Transfer soup to blender and blend until creamy. Transfer back to pot and add coconut milk, lime juice, cilantro and additional salt and pepper as needed. ENJOYYY!🍂

I’ve been working long and hard on this recipe for y’all and I’ve finally perfected it! BANANA CHOCOLATE CHIP MUFFINS are now on the menu!

A healthy but even better version of your mom’s (sorry mom) banana bread but in muffin form...and chocolate chips added of course. made with almond flour and sweetened just with honey 🍯
