Chicken wings in north port on Thursday ??

1:30pm update ➡️ Ok that seems to have gotten enough attention!

Thursday we will open on the north port green probably 4-7pm.

Chicken wings for sure, but this time I wanna try a different method. I've done it before, and it worked out great. It's called 0-400 method, start with a cold smoker, put all the wings on the smoker and turn smoker to 400, once it reaches 400 keep the winfs on until they are done. The high temp will get the wings CRISPY.

This takes about an hour tops, so I can keep running batches of wings every hour if there's enough demand. It's been so long that I can't remember how many wings I can fit on the little smoker... I'm guessing, hopefully 100 wings ??

With this in mind. It would be fantastic to get some pre orders from you guys so that I can made an adequate amount for everybody all day. Let's do it in increments of 5, if you guys can text or drop it in comments how many wings you'll want and I'll start a list !!

I guess discussing the price would be smart, but I don't know how much wings cost at the moment 😂😂 in the past sometimes I'd buy the organic wings at Costco, but I think a good chunk of people don't care if it's organic or not, and most wouldn't wanna pay a premium for the organic wings? Because they are 2x more expensive ....

Fb still has me in some bizarre restrictions, and I cannot tag my followers the way I was able to before 😤

It's a scorcher 🥵 is it just me or does this summer feel abnormally HOT?

Summertime schedules are always unusual. Weeks like this one, it doesn't make sense to make an official schedule but it's important for people to know where we are.

Thursday is essentially the only day when we will be open to the public. I apologize for this inconvenience, but a big chunk of communities in this area are gated.... So they don't allow non-residents to go through the gate to support the food truck they have invited onto their property ...

📍Island Walk at the West Villages
This is a gated community, so it is not open to the public. I have to specify this as I have gotten in trouble for this before 😆

Pork belly burnt ends are on the menu all week + the usual good stuff. Stay cool everybody!

Chances are some of you found out the hard way that my usual helper is not here this week....

Yesterday I had a brand new girl helping out, it was her first day, and today an hour before we are supposed to open - she texts me saying she isn't feeling well and can't come into work.

I scrambled, texted a few people and found a friend who was available to come lend a hand. She has never worked in the food truck and quickly learned that this is a tense/fast paced environment with no room for error.

My apologies to all that waited longer than usual for their food. Working in a food truck is not for the weak! We are doing our best. Some of you likely remember the days when i was doing everything by myself, with no helper, and i am thankful that today we have grown to such an extent that i cannot handle the workload by myself.

My favorite employee will return next week. She better! Dasha please come back 😵‍💫 the survival of my sanity and this family owned business depends on it 😂🥵

It has been 84 years since we started working on a new menu. Today I am posting the first release draft. Chances are some things will change here and there, especially the part that says pork belly, because I'm not sure which extra meat we should do regularly. I'm leaning towards turkey breast...
