We’re so happy to introduce Tonuka Roman, an incredible addition to our team as Director of Human Resources. Get to know Tonuka and why we’d love to crash her family crab boil! It’s a joy to work with her as she continues to embody DISH’s core values ✨

1) If I could cater an event for anyone in history, it would be Frida Kahlo. I envision a celebration filled with vibrant colors, delicious Mexican cuisine paired with strong drinks, and an atmosphere buzzing with art, culture, dancing, and lively Mexican music. It’s definitely an event I would love to attend!

2) What I love most about working at Dish is undoubtedly the incredible team. The core values are truly embraced by everyone. The passion, inclusivity, and genuine care for one another are evident from your first day working at Dish, and I feel so grateful to be part of such a fantastic group.

3) A particularly memorable event for me was our annual company gathering. It was truly special to work on an event that celebrated the accomplishments of our team from all departments. I’m already looking forward to next year’s gathering and hope to connect with more of our amazing event staff there.

4) My signature dish is a large, family-style seafood boil. Coming from a family of seafood enthusiasts, I love preparing a big batch that we can all share around the table. There’s nothing quite like enjoying homemade, juicy crab legs and corn on the cob with loved ones!

If you’re picking a welcome cocktail for your event, let’s make it pop. It’s always a blast to get to pair your personality with a creation that gives your guests a personal touch upon arrival.

Spicy margs are a go-to for a reason: they’re bold, they’re refreshing, and they get people talking. But you don’t need just one option 🍸 🍹

We usually recommend 2–3 welcome cocktails. That way it feels curated without being overwhelming. One spicy, one light + citrusy, maybe a zero-proof option too.

We had the honor of catering a beautiful fundraising gala for Foundation, an organization committed to improving the lives of Indigenous communities across Latin America—while preserving their culture and traditions.

Set at Chelsea Industrial, we served a plated dinner for 220 guests with warmth, intention, and bold flavor. From butternut squash & goat cheese tartlets during cocktail hour to wine-braised short ribs for the main course—every detail was designed thoughtfully.

We made sure dietary needs were covered too, with vibrant vegan options like roasted cauliflower + beluga lentils and family-style dessert platters featuring mini salted caramel brownie bites, tahini shortbread sandwiches, and apple pie tartlets.

Shoutout to our team for the flawless ex*****on with sparkling water in hand, and a preset salad moment.

There’s something special about starting the year not just with a celebration—but with connection, creativity, and a whole lot of heart.

Big shoutout to our leadership team for organizing an incredible team experience at the Dish holiday party!

From hidden talents to gratitude walls, each station brought a different company value to life—and reminded us how fun it is to connect with coworkers outside the day-to-day.

✨ BALANCE + PASSION
In the Tasting Room, we played “Passion Project”—a fun guessing game where each group matched anonymous hidden passions” to coworkers. Turns out, Dish is full of artists, curators and dancers.

👩‍🍳 COLLABORATION + INNOVATION
In the Kitchen, we went full Chopped mode—teams had 15 minutes, one secret ingredient, and unlimited creativity to make the best salad. The winning dish? It made it all the way to the party.

💛 INCLUSION + CARING
At the Gratitude Board in Sales, people shared what makes them feel included and grateful. The notes were heartfelt, funny, and real—and we brought the board with us to the celebration.

🌍 EARTH + GROWTH
In the Operations Loft, we held a sustainability brainstorm: 3–5 ideas each, 2 voted on per group, and final picks shared at the party. It was a reminder that small ideas can spark big change!

We honored our full-time employees with 5+ years at Dish with a bonus and a matching contribution to a charity of their choice and those with 10+ years also received a golden spatula! The party set the pace for an exciting year ahead as we enter Spring and we can’t wait to celebrate with you.

DESIGN / VIBE / VISION
We kept the style minimal, letting the beauty of St. Patrick’s shine. The three pillars: the Church (John’s Catholic), baby’s breath (my fave flower), and my dress (I knew it was the one before I met the one).

FOOD & DRINK
Gloria & John’s wedding was a true NYC affair. They literally looked like Cinderella and Prince Charming when they arrived at the reception! They opted for classic dishes that suited their upscale, refined aesthetic, such as Mini Lobster Rolls, Vegan Stuffed Cucumber, and Smoked Salmon Rillettes at cocktail hour. For dinner guests sat down to Pan Roasted Salmon with Leeks and White Wine Broth, and Wine Braised Beef Short Rib with Crispy Onions. The couple ended the evening with seasonal, fruity sweets made freshly in-house, including Lemon Curd Tartlets and Hibiscus Glazed Mini Doughnuts.

When we’re presented with goals for a luxury brand activation, we know that infusing the brand into the menu is essential.

Crafting this menu was a journey in itself—blending bold flavors, unexpected textures, and refined technique to create a unique experience from morning to night. Guests started the day with delicate touches like black truffle tamago and charred avocado toast, then transitioned into an evening of indulgence with quail egg and caviar, chicken piccata, and Angus strip with black truffle aioli.

If You Could Cater an Event for Anyone in History, Who Would It Be and Why?
If I could cater an event for anyone in history, it would definitely be Marilyn Monroe. I believe it would be an incredible event—elegant and sophisticated, yet with just the right amount of sexy flair. Her charisma and timeless appeal would make it a truly unforgettable occasion, with a perfect balance of class, excitement, simplicity, and classic tastes. I’d serve caviar, lobsters, oysters, shrimp cocktails, and lots and lots of champagne.

What Do You Love About Working at DISH?
Something I love about working at DISH is the opportunity to be a part of something special. Knowing that everyone plays an important role in bringing a meaningful moment to life for someone is truly fulfilling.

What’s Your Signature Dish and What’s the Story Behind It?
My signature dish is Ropa Vieja. This was the first dish I learned to make from my grandmother. She was paralyzed from the waist down, but she never let that stop her from cooking for her family. I would set up the electric pans, bring all the ingredients, and we would cook together. I was her little sous chef.
