If you didn't know, we love to cook! In fact, that was a big inspiration to starting Rocklands, simply having access to extremely fresh and high quality foods.

As we head into Memorial Day weekend, what better time to fire up the grill or smoker and enjoy some of our pasture-raised meats at home? Food pictures are always a bit tricky to pull off (these are no exception), but we'd like to give you an insight into these incredible St. Louis cut pork ribs we cooked up last weekend. You definitely don't have to have a smoker or grill to pull this off, but it is preferred. We also made this completely without sugar or honey, but you could definitely go that direction. Here's how we did it:

Smoked and Baked St. Louis Cut Pork Ribs:
If frozen, ensure meat is entirely thawed. Throughly salt (kosher) both sides of the ribs along with fresh black pepper. Then, allow ribs to sit at room temperature for at least one hour.

Meanwhile, prepare your basting sauce. Mix 2 cups of apple cider vinegar with 1 tbsp of hot pepper flakes. Done!

If you have a smoker or grill, try to get your temperature to hover consistently around 250 degrees. We love using well cured oak or fruit wood for the smoker. Indirect, consistent heat is the key! After the first 30 minutes, thoroughly baste ribs every 30 minutes. After 3 hours, flip ribs over. For the 3lb rack, we smoked them for about 5 hours total. Don't expect the ribs to be fully tender even after 5 hours. You really just want the smokiness from the wood that will really set off the flavor of the finished ribs.

Remove from the grill or smoker and transition ribs to oven at 250 degrees on a baking sheet tented with parchment paper or butcher paper. We prefer these options to aluminum foil because the paper is porous enough to allow some air to escape and not compromise the crust and texture you just worked 5 long hours for!

Bake tented ribs for about another 3 hours...tenderness should be evident now :)

For the final step, continue baking uncovered for 15 minutes at 400 degrees. Serve hot and ideally with a delicious side like potato salad. Direct message us and we'll send you the potato salad recipe as a bonus.

Hey Rocklanders — Unfortunately we have a bit of bad news we need to share...

Although this past weekend felt like a taste of the summer ahead, the weekend prior saw overnight temperatures below freezing. Despite all our efforts to prevent frost in the vineyard (which included @theregularmike & team working overnight), our vines sadly fell victim to a pretty severe frost and we lost the majority of our fruit set (grapes) for the year. We’re taking the loss in stride and will persevere to make the best of this difficult situation! We want to be transparent with you as we work on our plan for the 2020 vintage. We're so grateful for your continued support and we are truly looking forward to the day you can enjoy wine on the farm again. This week, we're highlighting the delicious Bone-In Pork Rib Chops from our friends at Autumn Olive Farms.

Available in both our "Essential" and "Grilling Pack," this premium pork "steak" might just be the best cut off of the pig.

Easy to prepare in just a few steps:
1. Generously salt (kosher) both sides of the chop and allow to come to temperature, at least an hour out of the fridge so that the chop can cook evenly. Add a few grinds of fresh black pepper to each side.

2. Heat cast iron or heavy skillet on medium heat.

3. SECRET STEP: Lightly sear chop on its fat cap edge first for a few minutes to render some fat, making it unnecessary for any added oils or butter in the cooking process.

4. Turn heat to high and sear on one side, about 3 minutes.

5. Turn chop to sear on other side. Now begin to baste top-side of chop by gently tilting pan toward you to better access the rendered fat in the pan. Begin to baste the top of the chop with a small spoon for 15-20 seconds.

6. Continue cook just about 1-2 minutes for medium/medium-rare. We prefer our chops at around 130 internal temp.

7. Allow to rest at least 5 minutes before cutting and serving. Enjoy!

Hi everyone! Quick update on what is going on in the vineyard here at Rocklands. Unfortunately we had a few instances of frost in these last ten days, seeing temperatures as low as 27 degrees. We suffered some damage, mostly in the Chardonnay and Gruner Veltliner and it remains to be seen how some of these vines will recover this season. But all is not lost! And we hope to only see a modest reduction in yield for affected varietals.

Spring frosts come with the territory when growing grapes, but they are heartbreaking nonetheless. Here at Rocklands we use multiple methods to try and limit frost damage. One of those methods that we'd like to show you is what we do when pruning our vines for the season.

For early developing varietals we try and delay pruning into late winter. A late pruning can push back bud break up to two weeks. As well, we also leave extra canes when pruning. Leaving an additional, longer cane allows us to take advantage of apical dominance, the tendency for shoots to begin growing from the tip of the cane first. The buds closer to the head of the vine are delayed and therefore more likely to avoid any frost events, as seen in the third photo. When a frost event hits after both canes have begun developing, we get the added benefit of being able to choose the less damaged cane to keep, as seen in photo 4.

While these are a couple of tools in our toolbox for preventing damages, ultimately the vineyard is dictated by mother nature. While sometimes frustrating, it keeps us humble while growing our grapes. We are looking forward to sharing whats growing in our vineyard ultimately in a delicious bottle of Rocklands wine for you all!
