Western PA produce coming in strong to pair with this tomato miso-marinated Berkshire pork chop grilled over binchotan.

Sungold tomato miso velouté to finish.

Agnolotti, my favorite pasta shape, are little hand-formed pillows with a built-in sauce scooper. They work so well with seasonal vegetable fillings. So simple, so beautiful.

This past season, spring pea agnolotti was a crowd favorite on my menus, and I loved featuring delicate pea shoots as a garnish from local farmer .

Looking forward to upcoming summer menu changes with our sweet Pennsylvania corn, featuring sweet caramelized corn agnolotti with corn butter and 18mo. Parmigiano Reggiano - starting this weekend!
