What are some non-typical items that you grill or smoke? I’m not talking pork shoulder, brisket, steaks, chops, etc. Tonight I have a stuffed pork tenderloin on the smoker. It’s stuffed with cream cheese, diced jalapeños, shredded cheese, and some garlic. Of course after it was trussed up it was coated with our Fat Pig pork seasoning!

Day 3’s lunch menu is a smoked chicken Caesar wrap, with shredded Parmesan cheese, and cherry tomatoes! Dressing on the side for the picky eaters haha. It’s been a blast this weekend being able to provide lunches and the staff dinner last night! I look forward to next years USPSA Illinois Sectional Championship!

Day 2 catering the USPSA Illinois Sectional Championship. On the menu today was a smoked chicken wrap, with choice of amicable split or jilted ex bbq sauce! Made for excellent boxed lunches!

Day 1 of catering lunch for the staff and range officers at the USPSA Illinois Sectional Championship. Was able to put together a cold boxed lunch for about 70.
