Japchae (Stir-Fried Starch Noodles with Beef and Vegetables)
Ingredients
7 ounces Korean potato starch noodles (dangmyeon, 당면)
1 carrot (about 3 ounces)
1/2 medium onion, preferably sweet variety, (4 to 5 ounces)
2 scallions
4 ounces lean tender beef (sirloin, chuck tender, rib eye, etc.) or pork loin
3 to 4 ounces fresh shiitake mushrooms (or 4 to 5 dried shiitake, soaked until plump) Or oyster mushrooms, wood ear mushrooms or button mushrooms. See note 1.
6 ounces fresh spinach (preferably a bunch of spinach)
oil for stir frying
salt
egg garnish (jidan) - optional
Sauce
3.5 tablespoons soy sauce
3 tablespoons sugar (or brown sugar) You can use a little less if you want.
2 tablespoons sesame oil
2 teaspoons minced garlic
1 tablespoon roasted sesame seeds
black pepper to taste
Instructions
Clean all the ingredients. Cut the carrot into matchsticks. Thinly slice the onion. Run the knife through the white parts of the scallions lengthwise, if thick, and then cut into about 2-inch long pieces. Remove the stems from the mushrooms, and slice into 1/4-inch thin strips. Cut the meat into thin 2-inch long strips.
Combine all the sauce ingredients in a small bowl and mix well until the sugar is dissolved.
In a large non-stick pan (see note 2), bring about 5 cups of water to a boil, and cook the noodles until completely translucent and soft (6 to 8 minutes). Drain in a strainer and rinse under cold running water. Drain well. Roughly cut the noodles with a pair of kitchen shears or a knife into 6 -7 inch lengths. Transfer to a large mixing bowl. Mix well with 3 tablespoons of the prepared sauce.
Fill the same pan with 2 cups of water. When water boils, blanch the spinach only until wilted. Drain quickly and shock in cold water. Squeeze out water, run a knife through the squeezed spinach a couple of times, and lightly season with salt.
Add 1/2 tablespoon of oil to the skillet, and stir fry the noodles over medium to medium high heat, stirring frequently, until translucent and a bit sticky (about 4 minutes). Transfer back to the mixing bowl.
Add 1/2 tablespoon of oil to the pan, and stir fry the carrot over medium high heat, sprinkling with a pinch of salt. When the carrot sticks are half way cooked, about a minute, push them to one side of the pan to make room for the onion slices. Stir-fry the onion slices until translucent, sprinkling with a pinch of salt. Stir-in the scallion and cook briefly. Do not overcook. The vegetables should be crisp. Transfer to the bowl with the noodles.
Add the beef and mushrooms along with 2 tablespoons of the prepared sauce and cook until the meat is cooked through, 2 - 3 minutes. Transfer to the bowl with the noodles.
Add the spinach and the remaining sauce to the bowl with all other prepared ingredients. Toss well by hand. Adjust the seasoning to taste by adding a little more (start with 1/2 teaspoon) soy sauce and/or sugar as necessary.
Optional egg garnish
Separate the egg white and yolk. Lightly beat the white by gently cutting it with a spoon. Stir the yolk with a spoon until smooth. Heat a lightly oiled nonstick skillet over medium low heat. Pour each egg part into a thin layer, by tilting the skillet and/or spreading with a spoon. Cook each side briefly. (Do not brown the egg.) Roll it and thinly slice.
Notes
Shiitake and wood ear mushrooms are typical for japchae. Dried shiitake has a concentrated flavor and meatier texture. You can use any kind of fresh/dried mushrooms such as oyster mushrooms or button mushrooms.
In this updated recipe, you'll use the same pan for cooking the noodles and spinach and for stir-frying the noodles and other ingredients.
Leftover japchae should be kept refrigerated. Japchae reheats well in the microwave. The noodles will get soft and chewy again

Bourbon Fig-Stuffed Pork Tenderloin with Gorgonzola 🍷🍖
Ingredients:
1 boneless pork tenderloin
1 cup dried figs, chopped
1 cup bourbon
2 heads roasted garlic cloves, squeezed out
8 ounces gorgonzola cheese, crumbled
3 tablespoons chopped fresh sage
2 tablespoons brown sugar
1 teaspoon dried herbs (thyme, rosemary, and oregano combo)
1 teaspoon salt
1 teaspoon pepper
2 tablespoons maple syrup
1 tablespoon balsamic vinegar
Directions:
Preheat the oven to 450°F (232°C). Line a roasting pan or baking sheet with aluminum foil and spray it with nonstick spray.
Place the pork on a cutting board and use a sharp knife to slice it open lengthwise, creating a flat surface. Make another lengthwise cut to increase the space for stuffing.
Place the dried figs in a bowl. Heat the bourbon in a saucepan over medium-low heat until it simmers, then pour over the figs and let them sit for 4-5 minutes.
Spread the roasted garlic cloves over the inside of the pork. Add the softened figs on top of the garlic, followed by the crumbled gorgonzola and chopped sage.
Roll up the tenderloin tightly and tie it with kitchen twine. Season the outside with salt, pepper, dried herbs, and rub with brown sugar.
Place the pork on the prepared roasting pan or baking sheet and roast for 30-35 minutes, or until the internal temperature reaches 140-145°F (60-63°C).
Let the pork rest for 20 minutes before slicing.
Combine the bourbon from the figs with maple syrup and balsamic vinegar in a saucepan. Reduce by half over medium heat and pour over the pork before serving.

FRIED CABBAGE WITH SHRIMP, SAUSAGE & BACON RECIPE:
5 slices of bacon, chopped
1/2 cup yellow onions, chopped
3 cups cabbage, cut in thin strips
10-12 shrimp, tail off & deveined
1 link of kielbasa or smoked sausage, cut 1/2 in
1 tbsp olive oil
1 tsp seafood seasoning
1/2 tsp smoked paprika
1/4 tsp black pepper
1/4 tsp salt
1/2 tsp oregano
3 cloves minced garlic
pinch of crushed red pepper, optional
2 tbsp butter
1 tsp apple cider vinegar
Season shrimp with olive oil and seafood seasoning. Put aside.
Cook bacon and remove from skillet. Leave the grease in the skillet.
Add sausage and brown on each side. Remove and put aside.
Add shrimp and cook on each side, approximately 3 minutes on each side, until shrimp are a pinkish color and make a "c" shape. Remove and put aside.
Add 1 tbsp butter and add onions, paprika, oregano, salt, pepper, and crushed red pepper. Cook for approximately 5-6 minutes until the onions begin to soften. Add garlic and cook until fragrant.
Add in 1 tbsp butter and apple cider vinegar. Allow them to incorporate and then add in cabbage, tossing really well.
Cook for approximately 12 minutes, until cabbage is tender. Stir in bacon, shrimp and sausage. Enjoy!

Ingredients:
2 medium tomatoes, roughly chopped
1 medium red bell pepper, diced
1 onion, roughly chopped
¼ cup oil
½ teaspoon curry powder
1 tablespoon cayenne, more if you like it hotter
2 bay leaves
¼ teaspoon ground ginger
1 teaspoon dried thyme
1 tablespoon smoked paprika
2 garlic cloves, minced
2 cups rice
1 tablespoon tomato paste
2 cups water
1 teaspoon salt
Directions:
Purée the tomatoes, onions, and pepper in a food processor.
Heat the oil in a large saucepan over medium heat. Add spices and garlic and sauté until fragrant, about 30 seconds.
Stir in the rice, puréed vegetables, tomato paste, water, and salt. Bring the mixture to a boil.
Reduce the heat to low; cover the pot and cook until rice is al dente, about 20-30 minutes (don't overcook). If the rice seems a little dry, add ¼ cup water and cover, which will allow it to steam through.
Garnish the rice with cilantro or parsley before serving.

STEAK & SHRIMP STIRFRY NOODLES:
Skirt or hanger steak, cut into bite sized pieces
1/2 lb shrimp, tail off & deveined
1/2 cup onion, chopped
1/2 cup green bell pepper
1/2 cup matchstick carrots
3-4 green onions, cut in 2 inch pieces
1-2 bok choy leaves, green separate from white (cut into 1 inch pieces)
Noodles of choice, cooked al dente, I used 1 pack Thai kitchen brown rice stir fry noodles
Veg oil for frying
Marinade:
1 tsp soy sauce
1 tbsp veg oil
Salt, pepper, chili powder, basil
1 tsp cornstarch
Sauce:
1/2 cup water
1/2 cup soy sauce
1/2 tsp apple cider vinegar
2 tbsp oyster sauce
1 tbsp brown sugar
1/2 tsp ground ginger
2 tbsp mixed garlic
1 tbsp hoisin sauce
1/2 tsp chili flakes or red pepper flakes
1/2 tsp cornstarch
Add steak to marinade. Put aside.
Prepare sauce and put aside.
Over medium high heat add oil to a skillet.
Add in onions, peppers, white parts of bok choy and cook for approximately 2-3 minutes. Add in steak and cook approximately 1 minute before adding shrimp, green parts of bok choy, green onions, and shrimp. Next add in the sauce and cook for approximately 2 minutes. Once sauce thickens add in noodles and give everything a toss. Enjoy!

RECIPE: Gumbo greens with cabbage 🔥
1 lb collard greens, washed and chopped
1/2 lb cabbage, chopped
1/2 cup vegetable oil
1/2 cup all purpose flour
1 onion, quartered
2 partially cooked smoked turkey wings (or one leg)
1/2 cup bell pepper, chopped
2 stalks celery, chopped
1/2 tbsp secondline creole seasoning
3 cloves garlic, minced
5 cups chicken broth
1-2 andouille sausage, cut in 1/2 inch pieces
10-12 raw shrimp, deveined and tail off
1/4 tsp cayenne pepper
1 tsbp garlic powder
1/2 tsp celery seed
1/2 tsp onion powder
2 tsp smoked paprika
1/2 tsp salt
1 tsp oregano
1 bay leaf
Add wings or leg to chicken broth to cook while you work on the next few steps.
Over medium heat add vegetable oil and mix in flour, whisking so there are no lumps. Cook until you get a dark brown color, stirring constantly and careful not to burn it!
Add in vegetables and stir to coat in roux. Allow them to soften and then add garlic, cooking until fragrant, 1 minute.
Add in seasonings and bay leaf. Next add the broth slowly and stir. Add in wings or leg and greens. Bring to a boil and then reduce heat and simmer, checking for doneness around 50 minutes. It may need to go longer.
Remove meat and pull from bones and return to pot. Add in sausages and cook for approximately 10 minutes before adding shrimp. Cook shrimp until they lake a nice "c" shape and have a nice pink color.
