The excitement.
The anticipation.

The sudden emotional attachment to the exact shade of ivory linen you swore you didn’t care about six months ago.

And yes, even the panic over whether the candlelight feels warm enough at 6:47pm.

We’re back.
It’s us again with another book.

At this point, “The Book Of” series has become our favorite way to overthink food in the most entertaining way possible.

What started as a playful internal creative exercise somehow turned into tiny culinary documentaries…part history lesson, part design experiment, part dad joke.

Because the truth is:
food tells stories.

Sometimes those stories are about burrata.
Sometimes they’re about bubbles.

Tiny luxury bubbles.
Champagne bubbles.
Caviar bubbles.
Bubble tea bubbles.
Molecular gastronomy bubbles.
Emotionally supportive popping boba.

And while these books are intentionally whimsical (and occasionally ridiculous), they’re also a reflection of how we think about food at Thomas Preti: with curiosity, creativity, nostalgia, humor, and probably too much research.

The Book of Bubbles is our latest chapter in “The Evolution of Real Food”; tracing humanity’s long-standing emotional attachment to tiny floating spheres.

Which, honestly, says a lot about us.

There’s a moment at every event where the room finally settles in. The lighting is just right. The cocktails are flowing. Guests are enjoying themselves effortlessly, as if the room wasn’t completely bare a few hours ago…which was exactly the plan!

Behind every seamless dinner, rooftop reception, wedding weekend, gala, summit, and celebration is an entire ecosystem of people making thousands of precise decisions in real time.

This week alone our team is moving between museum events, innovation conferences, family festivals, cocktail receptions, private dinners, weddings, rooftops, glasshouses, playgrounds, offices, and landmark venues across NYC.

If summer had a signature flavor… it would be sun + smoke + something cool. That’s the thread running through our current beach-obsession lineup:
charred, grilled, fire-kissed produce
a tangy yogurt moment that cools everything down,
sweet-tart blackberry used like a glaze (not a dessert)
and one crunchy element that keeps the bite alive.

It’s why blackberry lacquered chicken and blackberry braised short rib hit so hard, that fruit acidity cuts right through richness.

And why the shawarma eggplant and sumac salmon feel like the definition of “light but satisfying” because that yogurt + cucumber vibe keeps everything bright and beachy.

We’ve been told we offer so much value as a catering partner. We take that personally. It means so much to us to be able to do what we do best in a forum that allows us to be who we are. Unapologetically authentic with our color coded crates and veteran team (some over 30 years!). Catering has changed over the last few years, especially coming out of the pandemic, but the way our planners feel, the event partners, vendors, clients, guests and beyond, if they’re happy, mission complete. A lot of luxury hospitality is just emotional intelligence in a black uniform. The strongest teams aren’t usually the loudest ones in the room. They’re the ones quietly paying attention to everything. We’ve got your back, every step of the way. Spring season is fully underway, we’re so excited for our 39th season in New York City! It doesn’t get any better than this!
