What’s some differences between Andouille(Ahn-Do-Wee) & Smoked Sausage! 🌶🫑🧄🧅
🌶 Smoked Sausage is minced meat put through a grinder, it can be beef, pork, chicken or any combination of meats.
🧅 Cajun Smoked Sausage is Cajun spices added to the minced meat combination.
🧄Andouille is coarsely chopped meat(all pork) and ingredients.(Pictured below)
🫑 Andouille is double-smoked, meaning the pork shoulder is seasoned, smoked then chopped and put into the casing with seasoning to be smoked again, which enhances the flavor profile.
🌶 The Andouille is going to deliver more flavor with the chopped pieces of pork belly/fat, mixed with smoked pork shoulder and various spices.
🧅You can try to substitute other types of sausage for it, but the characteristics of Andouille make it unique to others on the market.
🧄 All Andouille is smoked sausage but not all smoked sausage is Andouille!!
