May = BBQ season officially in full swing 🔥 And if you ask me, some of the best ribs you'll ever eat come straight off a drum smoker. Simple process, killer bark, tender bite and packin with flavor.

INGREDIENTS:
• St. Louis Style Ribs
• Heath Riles Garlic Jalapeño Rub
• Heath Riles Sweet BBQ Rub
• Heath Riles Tangy Vinegar BBQ Sauce
• Butter
• Spritz bottle (water, ACV or preferred liquid)
INSTRUCTIONS:
1. Square up them ribs, remove any excess fat and remove that membrane.
2. Season generously with a layer of Heath Riles Garlic Jalapeño followed by that Sweet BBQ Rub. Let ribs sweat while smoker comes to temp.
3. Fire up smoker to 275°F. Place ribs on straight and smoke, spritzing every so often to keep from drying out.
4. Once bark is set and bones begin pulling back, wrap ribs with:
• Few pats of butter
• Vinegar BBQ Sauce
• Light dusting of sweet bbq rub
Place ribs meat side down, sauce on backside, wrap tight and return to smoker.
5. Continue cooking until tender. Check for a good bend and should probe around 202-205°F internal with a thermometer (used my ThermoWorks Thermapen One)
6. Unwrap, hit with a little extra rub to clean up the appearance and place back on smoker about 15 minutes to tack everything up.
7. Rest for a minimum of 30 minutes, slice up and enjoy 🤙🏻
