Great past few days! Slaughtered and broke down 2 pigs in Taylorsville then brought to the shop for processing. So far on day 2 of green/pink peppercorn and garlic cure pork belly, breakfast, chorizo, boudin and linguica sausages. Tomorrow bratwurst, merguez and Pica sausages! This is what we do on off days!
