Hereβs a simple recipe for Nigerian White Rice and Stew:ππππππ

π White Rice
Ingredients:
3 cups long-grain white rice
6 cups water
1 tsp salt
1 tbsp vegetable oil or butter (optional)
Method:
1. Rinse rice in cold water until the water runs clear (removes excess starch).
2. In a pot, add water and bring to a boil.
3. Add rice, salt, and oil. Stir once.
4. Cook on medium heat until the water reduces. Reduce heat to low, cover tightly, and steam until soft and fluffy.
5. Set aside.

π² Nigerian Tomato Stew
Ingredients:
6 fresh tomatoes (or 1 can plum tomatoes)
3 medium red bell peppers (tatashe)
2 scotch bonnet peppers (atarodo) β adjust to taste
1 medium onion
3 tbsp tomato paste
Β½ cup vegetable oil (or any cooking oil)
2β3 cups meat or chicken stock
1 kg chicken, beef, or goat meat (pre-cooked & seasoned)
2 seasoning cubes
1 tsp curry powder
1 tsp thyme
Salt to taste
Method:
1. Blend tomatoes, peppers, and half onion until smooth. Boil the blend in a pot until water dries up (thick paste).
2. In another pot, heat oil, add chopped onions, and fry tomato paste for 2β3 minutes.
3. Add the boiled tomato-pepper mix. Fry on medium heat, stirring often, until oil begins to separate (about 20β30 minutes).
4. Add stock, seasoning cubes, curry, thyme, and salt. Stir well.
5. Add cooked meat/chicken into the stew. Simmer for 10β15 minutes.
6. Taste and adjust seasoning.

Serve hot: White rice with rich tomato stew, garnished with fried plantain, salad, or moi moi if you like.ππππππ
