4 large eggs

1 cup (200g) crushed pineapple with juice

1 cup (90g) desiccated coconut

2 tsp baking powder

Β½ tsp baking soda

Β½ tsp salt

2 tsp vanilla extract

For the Frosting

1 cup (230g) unsalted butter, softened

4 cups (500g) powdered sugar

ΒΌ cup (60ml) pineapple juice (reserved from the can)

Instructions
