Vibrant, earthy, and perfectly balanced. Our Borani Laboo (Roasted Beet Borani) brings a gorgeous splash of color and incredible depth of flavor to the table. We slow-roast seasonal beets to bring out their natural sweetness, serving them over rich, strained yogurt, feta with garlic, fresh herbs and chopped walnuts.

The secret to that unforgettable flavor? Absolute freshness. We source our seasonal gems locally from , an incredible veteran-owned farm right here in Fredericksburg. šŸšœā¤ļø

šŸ“ Next time you’re cruising down White Oak Road, pull into the C&T Produce tent farm stand (right at the corner of Ferry Rd & White Oak Rd) to score some fresh, local goodness and support the hands that feed our community!

Sabzee Chalaw with Lamb is a soulful Afghan dish featuring tender lamb simmered with garlic, onions, and spices, folded into fragrant sautĆ©ed spinach and served over fluffy steamed chalaw rice. While similar varieties are found around the region—like Iran’s Ghormeh Sabzi, Pakistan’s Palak Gosht, or India’s Saag Gosht. The Afghan version is milder and more balanced, letting the ingredients shine without overpowering spice. Served with homemade yogurt and fresh salata for the perfect bite. Made from scratch, rooted in home.

At Zadran’s Kitchen, we bring you flavors steeped in tradition, stories passed down through generations, and dishes that warm the soul. One of our favorites? Borani Kadu! A velvety, spiced butternut squash dish that embodies Afghan homestyle cooking.

Sauteed with garlic, turmeric, onions and a hint of sweetness, our Borani Kadu is served with creamy garlic yogurt and fresh herbs, creating a balance of warmth and freshness in every bite. It’s the perfect blend of comfort and elegance. One that pairs beautifully with naan or rice.

Ready to experience Afghan cuisine beyond kabobs? Let us bring the flavors of home to your next gathering.

Afghan Kofta is a delicious dish made from spiced ground beef or lamb, mixed with onions, garlic, and spices, then simmered in a rich tomato-based sauce, often accompanied by tender potatoes or yellow split peas. Unlike the spicier Pakistani and Indian koftas, Afghan Kofta has a milder, more tomato-forward flavor, with warm spices like cumin and coriander. The meatballs are often served with naan or Chalaw(cumin infused white rice), making it a hearty and comforting meal. While Indian and Pakistani versions may include vegetarian koftas or fried meatballs, Afghan Kofta focuses on slow-cooked, tender meat and simple yet bold flavors.

Savor the exquisite taste of Afghan mantu! These delicate dumplings, filled with ground beef or lamb, are steamed and topped with garlic hung curd and a savory channa daal cooked in onion and tomato sauce with spices. In some homes, extra minced meat is added as a topping for an even richer flavor.

Afghan mantu, a fusion of Central and South Asian flavors, traces its roots back to the Silk Road. Compared to its regional cousins, Uzbek, and Turkish manti, Afghan mantu stands out with its bold flavors and unique toppings using the daal nakhud (channa daal) in a rich tomato and onion sauce infused with spices. Uzbek manti are larger and often filled with minced lamb and sometimes pumpkin or potatoes served with hung curd or a light tomato sauce. Turkish manti are smaller, bite-sized dumplings filled with spiced meat and topped with garlic yogurt and a drizzle of melted butter infused with red pepper.

Every bite of mantu is a celebration of Afghanistan’s rich culinary heritage. Join us at Zadran’s Kitchen and experience the authentic taste of Afghan cuisine!
