3rd Annual Kendallville BBQ Cook-off August 26th 3:00PM at Bixler Lake Campground. 28 Teams will be battling to see who has the best BBQ around! The best part is, the public can sample ribs, brisket and pulled pork from all 28 teams. Tickets will cost $1.00 each. You cannot find good BBQ anywhere else for this price! Tickets can be purchased starting at 3:00PM and we will sell them until we are sold out (we bought double what we had last year so come out and enjoy!). All proceeds will go to our daycamp scholarship fund. Thank you to all the teams and sponsors who make this event possible!

Have you ever bought fresh herbs only to have them go bad in a few days?
Here's a tip on keeping them fresh for a longer period of time;
- Lightly wrap your herbs with a damp paper towel. Best kept in your refrigerators crisper drawer.
- An even better solution would be to have them growing inside on a window seal where you could water them daily, and only use what you need. However for some, that option just isn't feasible.

If you're going to cook ribs... we suggest using the snake charcoal method and the 3-2-1 cooking method.
Snake Charcoal;
1 layer of charcoal around your grill creating a half moon. Then stack 2 more briquettes as seen in the picture a top of the single briquette. Put a few dry wood chunks on top of the charcoal, this will give you the "smokey" flavor you're looking for. Put 4-5 hot briquettes on one side of the snake. This method should give you around 6-8hrs of solid cook time. Try and shoot for a temp of around 225-235ish. Adjust your vents as needed to get to the desired temp.
3-2-1 method is simple, just follow these steps;
3 hours bone side down
- coat the ribs with mustard and then apply a generous amount of dry BBQ rub
2 hours wrapped in foil, bone side up
- melt unsalted butter, mix in some brown sugar, and more BBQ rub, apply generously to ribs
1 hour unwrapped bone side down
- apply your favorite BBQ sauce to create a delicious finishing glaze
Take the ribs off the heat, let rest for about 15min, cut em' and enjoy!
