We got the rest of the results in today from yesterday’s competition:
7th in Pork
6th in Chicken
With a 7th overall.
1st in Peoples Choice
Not too bad considering 20+ teams entered.
Again thank all that came out. I have not been a big fan of Peoples Choice award but glad the folks enjoyed my food. Special thanks to the Masonic home for children in Oxford and their administrator. You put on a great festival and parade!!!

1st Place!!!! We came into this competition with a new recipe that I was determined to make work with the judges. It was Mexican Pulled Pork. We didn’t get it done with them but apparently the people thought it was awesome coming back for seconds and thirds. We won!!!! Our first peoples choice award. Thank you Masonic Home for Children for letting us compete today..Woohoo

So, the FDA has recalled Blues Hog Sweet & Savory rub lots 034-363 and 034-364 because of soy and wheat allergies. Really?!!!!! The number 2 and 3 largest crops in the US. If you’re allergic to those two you need to live in a plastic bubble!!!! Luckily, I don’t have those lots. And if I did, I’m NOT returning it!!! And it’s delicious on ribs!!!!!!!

What it takes to make a simple Onion ring recipe with Marinara sau!!! Misty Senter loved it!!!!

½ cup Flour
½ cup Rice flour
¼ cup Cornstarch
¼ cup Corn Meal, very fine
1 teaspoon Baking Powder
1 teaspoon Creole Seasoning
Salt and Pepper to taste
About 8 to 10 ounces Miller Lite
2 cups Approx of Panko
You should see the Flat top stove…lol…

Went Chef again for Misty Senter cooked a nice meal for this tired young lady
Mediterranean Flounder with couscous

8 oz flounder
½ Cup Eggplant/Aubergine, Sliced
1 Shallots, Sliced
1 large Garlic, Sliced
6 Heirloom Cherry Tomatoes
2 Tablespoons White Wine
2 Tablespoons Tomato Puree
3 Tablespoons Vegetable Stock
2 Tablespoons Olives- sliced
4-5 Sundreid Tomatoes
1 Calabrian Chilies, sliced
Salt and Pepper
Olive Oil
1 Sprig Oregano leaves, Smashed
1 Lemon zest and juice
1 cup Israeli Cous Cous (can be made in 10 minutes or use leftover - follow directions on box or bag)

So I went all gourmet Chef tonight instead of Pitmaster. Wanted to cook Misty Senter a nice dinner.
Smoked spatchedcocked chicken
Meat Church BBQ lemon pepper rub
Olive oil and chicken stock cubes
Brazed with:
Olive oil, fresh chopped thyme, butter, salt, pepper, splashed with red wine vinegar topped with zest of lemon and lemon juice topped with fresh parsley
Chicken was Quartered
