We are loving how refreshing the Island Espresso Tonic is, especially on these hottt days.

Made with Organic Coconut syrup, Organic pure pineapple juice, tonic water & of course a double espresso. Also available as a Matcha Tonic.

Creating new seasonal drinks can be fun, but tricky. Sometimes a drink sounds good in your head, but then you go to make it and there were variables that you did not consider.
This drink was one of them.
Originally I had planned to make a Coconut Key Lime Latte.
Sounds good right? The syrup was so good made with key lime juice and coconut sugar and then mixed with coconut syrup.

Then came the assembling of the drink.
First the key lime & coconut syrup, espresso & milk.

About the time I started adding the ice, I noticed the lime juice making the milk curdle.

Yuck!

I had to rethink the drink. I could potentially use coconut milk, but only have so much room in the trailer for extra milk storage.

I knew I wanted something refreshing and light on the menu...then it hit me summer is the perfect time for tonics.

Turning our focus away from a milk based drink, we began the assembly again.

First, key lime & coconut syrup, next ice, then tonic water & lastly the espresso. Topped with a fresh lime.

Now came the moment of truth was it as good in real life as it was in my head?

The answer. Yes. Refreshing, lighty sweet and tart with a balanced espresso shot. This one left you wanting more.

Here's the recipe👇

Key Lime Syrup Recipe
1oz key lime juice
2 Tbls coconut sugar
2 oz hot water
Mix until sugar is dissolved

1 oz coconut syrup, I like Holy Kakow Syrup
6-8 oz tonic water
Ice
Double espresso
Fresh lime wedge, optional*

Instructions
Pour 1.5 oz key lime syrup into a cup with 1 oz coconut syrup. Give your cup a swirl to mix the syrups together. Then add ice to the top of the cup. Pour tonic water in the cup over the ice leaving room at the top for your espresso. Next, slowly pour your espresso on top of the ice. Top with a fesh lime wedge and enjoy!

The drink of the day was the Salted Vanilla Honey Cappuccino Iced, with 68.
I do not have words for today! Main Street Thurmont you all are so great and showed up. We were so blessed by your support and your patience.
Looking forward to next time we get to serve you all coffee, June 20th & 27th.

Stayed tuned for our summer menu and because we have seen such a great response to our salted honey cappuccino, we decided to keep it on the menu.
