Had some time to smoke a Brisket this weekend.
Started with a 13lb Packer
Trimmed 3.5lbs of fat and seasoned with Manny's Beef Rub.
12hrs on the UDS (topped with the fat trimmings for extra flavor) and we have the makings for some great sandwiches this afternoon

Another successful event
15 lbs of pulled Chicken, 25 lbs of pulled Pork, 16 lbs of Cole Slaw, 10 qts of BBQ Beans and 150 Brownies = 130 people with a full stomach

"People are still talking about the food here this afternoon and how good it was. I often hear people talk about good Bar-B-Q, but not often do you also hear people go on about the sides, especially the beans.
